Step-by-step

  • Preheat the oven to 400F while you chop the Vegetables and press the Tofu.
  • Grease 2 baking trays, or line with a Silicone mat.
  • Add the sliced Onions to a large bowl, and season with Salt and Pepper. Stir well, then add the Onions to the Baking Tray(s).
  • Next, add the sliced Portobello Mushroom to the same bowl, and season with the Tamari, 1/2 tsp Chili Powder, and 1/4 tsp Cumin. Mix well, then place the Mushrooms on the Baking Tray(s).
  • Add the sliced Peppers to the same bowl, then season with the remaining Chili Powder, Cumin, Cayenne Pepper, and 1/2 tsp Salt. Mix well, and divide on the Baking Trays.
  • Finally, give the bowl a quick rinse. Add the cubed Tofu, Lime Juice, Nutritional Yeast, Salt, and as much (or little) of Chipotle Seasoning as you would like, and give it a good stir until the Tofu is well-coated. Place on the Baking Tray with the other Vegetables.
  • Bake for 30-35 minutes, taking the trays out of the oven after 15 minutes to flip the vegetables and tofu. Also, make sure to switch whatever tray was on the top rack of the oven!
  • Once the Tofu is crispy, remove from the oven and serve as desired. If you are serving with tortillas, I would recommend heating them up in the final few minutes of Vegetable roasting.

My Weeknight Savior: Vegan Sheet Pan Fajitas

As a busy working mom, time is my most precious commodity. Dinner prep often feels like a race against the clock, a frantic dash between school pick-ups, soccer practice, and the never-ending cycle of laundry. So, when I discovered sheet pan dinners, it was like a culinary revelation. One pan, minimal cleanup, and a delicious, healthy meal on the table in under an hour? Sign me up!

This Vegan Sheet Pan Fajitas recipe has quickly become a staple in our household. It’s incredibly versatile, allowing me to customize it based on what’s in my fridge. Sometimes I add zucchini or bell peppers, other times it's all about the onions and mushrooms. The beauty of this recipe lies in its simplicity. The chipotle lime tofu is the star, its smoky flavor perfectly complementing the savory vegetables. The combination is delightful! The vibrant colors of the peppers and onions alongside the crisp tofu make it a visually appealing meal, too. It’s the kind of dish that leaves everyone happy and satisfied.

Beyond the Dinner Table: This recipe isn't just about a quick weeknight dinner; it’s about creating lasting memories. My kids actually enjoy helping with the prep, measuring spices, and arranging the vegetables on the sheet pan. It’s a chance for us to connect, to share a task, and to build those little moments of family togetherness that make life so much richer. Evenings spent around the table, savoring the flavors and sharing stories, are what I cherish most. This simple recipe makes those moments possible without sacrificing my precious time or sanity.

Tips and Tricks for Success: For the best results, make sure your tofu is extra-firm and well-pressed. This removes excess moisture, ensuring it crisps beautifully in the oven. Don't be afraid to experiment with the spices! If you prefer a milder flavor, reduce the amount of chipotle powder. Add some extra veggies that are readily available! This dish is also great for meal prepping. Prepare everything ahead of time, store it in the fridge, and pop it in the oven when you're ready to eat. I often double the recipe so we have leftovers for lunch the next day.

This recipe isn't just a meal; it's a lifestyle. It's about embracing convenience without compromising flavor or nutrition. It's about finding joy in the simple act of cooking and sharing a meal with loved ones. It’s a testament to the fact that healthy eating doesn’t have to be complicated or time-consuming. It can be quick, easy, delicious, and even a bit fun!

Serving Suggestions: We love serving these fajitas with warm tortillas, a dollop of avocado, and a sprinkle of fresh cilantro. A side of rice or quinoa is also a great addition. For an extra kick, add some salsa or hot sauce. The possibilities are endless!

So, the next time you’re staring into the abyss of a busy weeknight, remember this recipe. It's your ticket to a delicious, healthy, and stress-free dinner. It’s a simple recipe with a big impact—a meal that nourishes not just the body but also the soul.
