Step-by-step

  • Wash rice under running lukewarm water until clear.
  • Pour the rice into a cooking pot and pour the meat stock just to the top of it (you do not have to use up the meat stock if it is too much).
  • Cook until al dente (ie, not too hard and not too soft).
  • When it is done, fluff with a fork and refrigerate for an hour or more (This helps to remove the moisture and helps with easy handling without causing it to be mushy). If you cannot refrigerate the rice, just pour it onto a flat tray and air it out.
  • Wash and drain the vegetables.
  • Snap and cut the green beans into tiny bite sizes.
  • Wash and diagonally chop the green onion.
  • Thinly slice or grate the cabbage.
  • Wash, shell, devein the shrimp, drain and season with a pinch of salt.
  • Chop the liver into bite-sized pieces and season with a pinch of salt.
  • In a wok and on high heat, heat up 1 tbsp of the peanut oil.
  • Pour in the chopped liver and sauté until golden brown.
  • Drain the cooked liver onto a paper towel and set aside.
  • Pour in the other tbsps of the remaining oil into the wok and let it get hot; then pour in the onion and sauté until almost translucent. (Be ready to go through frying the vegetables and the rice quickly).
  • Throw in your green beans along with the other vegetables except the cabbage and green onion.
  • Sauté for about 2 minutes (You want the vegetables to retain their crunch).
  • Mix in the cabbage and the shrimp and add the seasonings and spices except the nutmeg.
  • Pour in the rice in little increments and keep stirring really fast.
  • Once the rice is mixed in, stir in the nutmeg and the green onion and check for seasonings; making sure to adjust the seasonings where necessary.
  • Remove rice from the heat and serve.

The heart of this dish lies in the perfectly cooked rice. The secret? A little pre-planning goes a long way. Cooking the rice ahead of time and allowing it to cool removes excess moisture, preventing a mushy texture. This ensures that each grain remains perfectly separate and fluffy, even when tossed with the other ingredients. The vegetables play a crucial role, contributing a delightful array of textures and colors. The snap of the green beans, the sweetness of the corn and peas, and the slight crunch of the cabbage all dance beautifully together in every bite. And let's not forget the protein! Whether you choose shrimp, chicken, or beef, the protein adds a satisfying heft and a savory depth to the dish.

The aromatic spices are the finishing touch, elevating this simple fried rice into something extraordinary. The ginger adds a warm, subtle pungency, the curry powder brings a hint of exotic warmth, and the nutmeg provides a touch of aromatic complexity. The subtle heat of the spices blends harmoniously with the other ingredients, creating a symphony of flavors that tantalize the taste buds. The overall flavor profile is a delicious blend of savory, sweet, and slightly spicy notes, leaving a lingering warmth on the palate. It's the perfect balance of comfort food and culinary adventure.

This Nigerian Fried Rice is not just a quick and easy meal; it’s a celebration of flavors and textures. The vibrant colors alone make it a feast for the eyes.
