Step-by-step

  • Soften the butter and cream cheese in the microwave or in a large saucepan over very low heat.
  • Stir with a wooden spoon until smooth. It shouldn't be completely liquid.
  • Add the flour, a little at a time and stir until a soft dough forms.
  • Cover and chill for at least an hour in the fridge.
  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Add the onions and saute until they start to soften and change color, about 10 minutes.
  • Reduce the heat to low and let them cook until they turn a gorgeous golden brown and smell incredibly sweet, another 30 minutes or so, stirring every 15 minutes or so.
  • If the onions start to dry out, turn the heat down some more and add a little more olive oil.
  • Add the thyme and brandy and stir to combine.
  • Season with salt and pepper.
  • Cook for 10 minutes more.
  • Preheat the oven to 350°
  • Pull the dough out of the fridge and let it come to room temperature while the onions are finishing.
  • Now's a good time to grate the cheese if you haven't already.
  • Roll the dough out, using a little flour to prevent sticking.
  • Transfer to a baking sheet.
  • It's OK if it extends past the edges.
  • Spread ¾ of the cheese on the dough, leaving an inch or more all the way around.
  • Arrange the onions over top the cheese.
  • Fold the sides up, leaving some of the onions exposed in the middle.
  • Spread the remaining cheese on top.
  • Bake for 30-35 minutes.
  • The top will turn a nice golden brown.

My Rustic Onion Tart Adventure: A Simple Recipe for Comfort

As a busy working mom, time in the kitchen is a precious commodity. I crave meals that are both delicious and satisfying, but don't require hours of slaving over a hot stove. That's why I've fallen head over heels for this Rustic Onion Tart recipe. It's surprisingly simple to make, yet boasts a depth of flavor that far surpasses its ease of preparation. The caramelized onions are the stars of the show, their sweetness balanced perfectly by the savory, slightly tangy cheese and flaky crust.

The beauty of this recipe lies in its versatility. I often adapt it to whatever ingredients I have on hand. Sometimes I'll add a sprinkle of fresh herbs like rosemary or thyme, other times I experiment with different types of cheese – Gruyere, Fontina, even a sharp cheddar can work wonders. The possibilities are endless! The rustic nature of the tart also allows for some creative license. My crust is never perfectly round or uniformly shaped, and that’s perfectly fine. In fact, I’ve come to embrace the imperfections, viewing them as a testament to its homemade charm.

One of my favorite things about this tart is its adaptability to different occasions. It’s equally at home as a weeknight dinner, a casual lunch with friends, or even a sophisticated appetizer at a dinner party. I've served it warm from the oven, paired with a crisp green salad, or at room temperature as part of a charcuterie board. The flavor holds up beautifully, regardless of how you choose to serve it.

The process of making the tart is almost meditative for me. The slow caramelization of the onions, the gentle kneading of the dough, the careful layering of the ingredients – these simple actions somehow feel restorative and calming after a long day. It's a chance to disconnect from the hustle and bustle of daily life and focus on the simple pleasure of creating something delicious.

Beyond the culinary aspects, this recipe represents something more to me. It’s a symbol of comfort, a reminder of simpler times, and a testament to the power of good food to bring people together. Whether I'm sharing it with my family, friends, or simply enjoying it by myself, this rustic onion tart always seems to evoke a sense of warmth and contentment. I hope you find the same joy in making and sharing it.

Beyond the Recipe:

The recipe is straightforward, and the results are consistently delightful. However, the true magic lies in the small details. Don’t rush the caramelization of the onions; the longer they cook, the richer and sweeter their flavor becomes. Use good quality ingredients; the flavor of the cheese and the olive oil will shine through. And most importantly, have fun with it! Don't be afraid to experiment and personalize the recipe to your own tastes.

I encourage you to make this tart your own. Add your favorite spices, experiment with different types of cheese and onions, or even try substituting the pastry for a different type of crust. The beauty of this recipe is in its simplicity and adaptability. Whether you're a seasoned baker or a kitchen novice, I’m confident you'll love this simple yet sophisticated tart.

I invite you to share your own experiences and variations of this recipe. Perhaps you’ve added a unique twist, or discovered a surprising ingredient combination that elevates the flavor profile. I would love to hear your stories and ideas. Happy baking!
