Step-by-step

  • In a large skillet heat 2 Tbsp. of olive oil over medium high heat.
  • Pat your pork chops dry and season well with salt and pepper on both sides.
  • In batches, sear each chop until browned on both sides, about 1-2 minutes per side and then place them into a side plate. Make sure you dont overload the pan!
  • Once all the pork chops are browned and out of the pan, add the other Tbsp. of oil and then your sliced onion and smashed garlic.
  • Season them with salt and pepper to taste and saute them stirring constantly for a minute or two.
  • Next, add the wine to the pan and scrape up the brown bits with a wooden spatula to deglaze the pan.
  • After the wine has simmered for a minute or two, add your broth and tomato paste. Stir well to combine and add your pork chops back into the pan. Bring it to a boil.
  • Once boiling, reduce the heat to medium, cover and simmer for an hour, stirring periodically. IF it starts to dry out, add a little water (I didnt run into this issue).
  • Serve immediately after the hour is up. Enjoy!

My Go-To Weeknight Dinner: Drunken Pork Chops

As a busy mom of three, finding time to cook a delicious and satisfying dinner can feel like an impossible task. Between school pick-ups, after-school activities, and the general chaos of family life, the last thing I want to do is spend hours in the kitchen. That's why I've come to rely on simple, yet incredibly flavorful recipes that can be whipped up quickly without sacrificing taste. One of my absolute favorites? Drunken Pork Chops.

This recipe is a lifesaver on those hectic weeknights. It's incredibly forgiving, requiring minimal active cooking time, and the result is a tender, juicy pork chop swimming in a rich, savory sauce that even my picky eaters devour. The "drunken" part comes from the red wine, which adds a depth of flavor you won't find anywhere else. Don't worry about the kids; the alcohol cooks off completely, leaving behind only deliciousness. I often make a double batch, knowing leftovers are just as welcome the next day, perfect for a quick lunch or another easy dinner.

The beauty of this dish lies in its simplicity. The ingredients are basic—pork chops, onions, garlic, red wine, broth, and tomato paste—things I almost always have on hand. No need for exotic spices or hard-to-find ingredients. The process is straightforward, too. A quick sear of the pork chops, a sauté of the onions and garlic, a splash of wine to deglaze the pan, and then a simmering bath with broth and tomato paste. That's it! An hour later, you've got a restaurant-quality meal without the restaurant-quality price tag or time commitment.

I love to serve these drunken pork chops with a side of creamy mashed potatoes or a simple green salad. The rich sauce is perfect for soaking up all the deliciousness. And let's be honest, the clean-up is a breeze. One pot, minimal dishes, maximum flavor—what's not to love? This recipe is a testament to the fact that you don't need to spend hours in the kitchen to create a truly special and memorable meal. It's a perfect example of how simple ingredients, combined with a little bit of patience, can result in an extraordinary culinary experience.

I often adapt this recipe to whatever I have on hand. Sometimes I'll add mushrooms for an earthy flavor, or a sprinkle of fresh herbs like rosemary or thyme for an extra layer of complexity. Feel free to experiment and make it your own! The great thing about this recipe is its versatility. It's a blank canvas for your culinary creativity. You can easily adjust the seasonings to match your taste preferences. A dash of hot sauce for a little kick? Absolutely! A pinch of sugar to balance the acidity? Go for it! The possibilities are endless.

This recipe has become a staple in my household, a reliable go-to for busy weeknights when I need a delicious, satisfying meal that doesn't require a lot of effort. It's simple, elegant, and utterly delicious, proving that even on the busiest days, you can still enjoy a truly wonderful meal without spending a fortune or hours slaving away in the kitchen.
