We've all been watching too much Bake Off and it's got us craving sweets and treats, so we've been playing around with some new recipes and these have been a huge hit! The recent granola launch has also meant that we've had tons of granola in the office, so we used some of it in this recipe, which is delicious although I'm sure you could just use simple oats instead. The base of this is so gooey. It's made of just five ingredients: granola, coconut, peanut butter, rice syrup and a pinch of salt. It's gooey and coconuty and tastes so good sandwiched under the creamy chocolate layer with medjool dates, cacao powder, coconut oil, coconut milk and a squeeze of date syrup. If you've got the baking bug too we couldn't recommend these more!

Step-by-step

  • Start by making your base; mix the granola, coconut, peanut butter and salt in a large mixing bowl.
  • Place your honey in a pan and bring to the boil, when boiling pour over the granola mix and stir well.
  • Push the mixture down into a lined baking tray and set aside in the fridge to cool for 1-2 hours.
  • Next make your chocolate topping; simply place all of the ingredients in a blender and blitz well until smooth.
  • Spoon over the flapjack bottom and spread out well.
  • Put the flapjacks back into the fridge to cool for another 1-2 hours.
