Step-by-step

  • Stir the olive oil, lemon and lime juices together and coat the salmon with the marinade.
  • Top the fillets with the slices of lemon and lime and then sprinkle with cilantro.
  • Put the 2 tablespoons of butter on top of the fillets.
  • Marinate the salmon fillets for at least ½ hour or more. You can also marinade overnight in the refrigerator.
  • Preheat oven to 350 degrees F.
  • Bake salmon for 25-30 minutes (30 minutes always works for me).
  • While the salmon is cooking you can prepare the avocado sauce, fresh salsa and slice the cabbage and lettuce.
  • Avocado Sauce: In a food processor, combine the avocado, Greek yogurt, cilantro, lime juice, salt and pepper. Process until smooth and then transfer to a bowl. Tip: You can also spread it with a spoon OR transfer it to a condiment container to make it easier to apply to the tacos.

  • When the salmon is done, take it out and allow it to cool for at least 5 minutes before dividing for the tacos.

  • Enjoy!

Salmon Tacos: A Weeknight Delight

As a busy working mom, finding time to cook healthy and delicious meals can feel like a Herculean task. But I’ve discovered a recipe that’s not only quick and easy but also incredibly satisfying: Salmon Tacos! These aren’t your average tacos; they’re a vibrant explosion of flavors and textures that the whole family will adore. And the best part? They’re ready in under an hour, leaving me with precious time for other things – like actually enjoying dinner with my kids.

The beauty of this recipe lies in its simplicity. The salmon marinates beautifully, absorbing the zesty flavors of lemon and lime. The baking process is effortless, allowing me to multitask and prep the accompanying sides while the salmon cooks to perfection. I love the freshness of the homemade salsa and avocado sauce; they elevate the tacos to a whole new level of deliciousness. The creamy avocado sauce provides a rich counterpoint to the flaky salmon, while the bright salsa adds a tangy kick.

One of my favorite aspects of this recipe is its versatility. I often swap out the toppings to match our family’s preferences. Sometimes we add shredded lettuce and cabbage for added crunch. Other times, I'll experiment with different cheeses, such as cotija or Monterey Jack. The possibilities are endless, allowing me to tailor the tacos to our moods and what's on hand in the fridge.

The prep work is incredibly straightforward. The marinade comes together in minutes, and the salsa and avocado sauce are almost as easy. I often make extra salsa and avocado sauce to use throughout the week – they're fantastic on eggs, salads, or even as a dip with tortilla chips. The salmon itself is remarkably forgiving; it’s difficult to overcook, which is a huge plus on a busy weeknight.

This Salmon Taco recipe has become a staple in our household. It's a quick, easy, healthy, and incredibly delicious meal that satisfies everyone’s cravings. It’s a perfect example of how a simple recipe can be transformed into a culinary masterpiece with a little creativity and fresh ingredients. Beyond the Recipe: This recipe isn't just about the food; it's about the moments we share around the table. It’s about creating memories, savoring delicious flavors, and connecting with my family over a meal that is both nourishing and enjoyable. The simple act of preparing and sharing this meal brings us closer, making it more than just a dinner; it’s a cherished tradition.

Tips for Success:

  • Marinate the Salmon: Allow the salmon to marinate for at least 30 minutes to maximize flavor absorption. Longer marinating times are even better!
  • Don't Overcook the Salmon: Overcooked salmon can become dry and tough. Start checking for doneness around 25 minutes.
  • Prep Ahead: Prepare the avocado sauce and salsa ahead of time to save time on busy weeknights. They will keep well in the refrigerator for a few days.
  • Get Creative with Toppings: Experiment with different toppings to find your family's favorite combinations.
  • Use Fresh Ingredients: The quality of the ingredients will greatly impact the overall flavor of the tacos.

Enjoy your delicious and easy Salmon Tacos!
