We shallow fried our Schnitzels, however, if you have access to a deep fryer, then the crispiness would be even crispier. Our Schnitzel uses a combination of Eggs, Arrowroot, and LSA for the crumbing. LSA is simply a mixture of Linseeds, Sunflower Seeds, and Almonds and is available pre-made in the health food section of the supermarket. It is worth noting that only 1/3 of the Arrowroot is used in the actual cooking.

Step-by-step

  • Using a meat mallet, bash the Chicken until 3mm fillets are achieved.
  • In a small bowl whisk the Eggs with 2 tablespoons Water, in a separate bowl add the Arrowroot, and in another separate bowl combine the LSA, Thyme, Paprika, Onion Salt, Garlic Salt, Pepper and Salt.
  • To make the Schnitzel, take your Chicken Breast and dip in the Arrowroot, then coat in the Egg mixture, and finally dip in the LSA mix.
  • Place on a baking tray.
  • Once all Schnitzels are made place them in the fridge for 30 minutes.
  • Heat a frying pan over medium-high heat, add the Coconut Oil and Butter.
  • Fry the Chicken ensuring it is submerged in the Butter and Oil for approximately 4 minutes or until the chicken is cooked through.
  • Serve along with Lemon Wedges, a leafy salad, and Mushroom Sauce.
