Step-by-step

  • Lay the chicken breast flat and slice it from the side. Don't cut all the way through; the idea is to be able to open the breast up like a book.
  • Open it like a book.
  • Put some wax paper under it and another sheet over it.
  • Beat your meat. Get it about 1/3 inch thick evenly. It should end up in the size and shape of a small dinner plate.
  • Season with the Italian seasoning.
  • Lay two slices prosciutto across the chicken.
  • Cover that with a slice and a half of muenster and fold it over like a taco.
  • Optional: Coat with panko, traditional breadcrumbs, pretzel crumbs, or nothing at all.
  • Put about 1/3 inch oil in a cast-iron pan. Heat it till the oil shimmers. Put both breasts in for 6+ minutes.
  • Turn for 4-6 more minutes.
  • Put on a platter and serve.

Twisted Chicken: A Weeknight Winner

As a busy working mom, finding time to cook delicious and impressive meals can feel like a Herculean task. Between school pick-ups, soccer practice, and endless to-do lists, the last thing I want is to spend hours slaving away in the kitchen. That's why I'm always on the lookout for recipes that are quick, easy, and yet still manage to wow my family. This Twisted Chicken recipe fits the bill perfectly. It’s a game-changer for those nights when you need a delicious, impressive meal on the table quickly, without sacrificing flavor or quality.

The beauty of this recipe lies in its simplicity and versatility. The basic preparation is incredibly straightforward—thinly pounded chicken breasts, layered with prosciutto and muenster cheese, then pan-fried to perfection. The result is a juicy, flavorful chicken dish that’s both satisfying and elegant. But the real magic lies in the adaptability. You can easily customize this recipe to fit your taste and dietary preferences. Feeling adventurous? Experiment with different cheeses, add some sun-dried tomatoes or spinach to the filling, or try a different type of breading for a unique textural experience. The possibilities are truly endless!

One of my favorite things about this recipe is how easily it can be elevated. I often serve it with a simple side of pasta. I cook the pasta al dente, toss it with a little olive oil, some thinly sliced raw garlic, briny oil-packed black olives, and a drizzle of good quality extra virgin olive oil. The salty olives and pungent garlic provide a delightful contrast to the rich, savory chicken, creating a balanced and delicious meal. But honestly, this chicken is so versatile it pairs perfectly with a range of sides – from roasted vegetables to a simple green salad.

Beyond the Basics: Recipe Variations

The foundation of this Twisted Chicken recipe is solid, but there’s so much room for creativity! Here are a few ideas to get you started:

  • Spicy Kick: Add a pinch of red pepper flakes to the Italian seasoning for a subtle heat.
  • Mediterranean Twist: Substitute feta cheese for the muenster and add sun-dried tomatoes and Kalamata olives to the filling.
  • Creamy Delight: Spread a thin layer of pesto or cream cheese on the chicken before adding the prosciutto and cheese.
  • Herb Infusion: Experiment with different herbs in the Italian seasoning blend, such as rosemary, thyme, or oregano.
  • Gourmet Breadcrumbs: Ditch the traditional breadcrumbs and try panko, pretzel crumbs, or even crushed nuts for a unique crunchy texture.

This Twisted Chicken recipe is more than just a meal; it’s a testament to the power of simple, delicious cooking. It’s a recipe that empowers me to create something special without sacrificing my precious time. It’s a recipe that’s become a regular staple in our family, proving that even on the busiest of weeknights, a truly satisfying and impressive meal is always within reach.

So, the next time you're looking for a quick, easy, and surprisingly impressive dinner option, give this Twisted Chicken a try. You won’t be disappointed!

Tips for Success:

  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Aim for a juicy, tender result.
  • Use a good quality olive oil: The flavor of the olive oil will enhance the taste of the chicken.
  • Season generously: Don't be afraid to use a generous amount of Italian seasoning. This will add depth of flavor to the chicken.
  • Let the chicken rest: Allowing the chicken to rest for a few minutes after cooking will help it retain its juices.

This recipe is a real winner for any occasion. Whether it's a casual weeknight dinner or a more special occasion, this Twisted Chicken recipe will surely impress your family and friends. Enjoy!
