Step-by-step

  • Add oil and butter in the pan, medium heat.
  • Add cinnamon, cloves, and cardamom to flavour the oil.
  • Once these sizzle add the chopped onions.
  • Turn down the heat and allow onions to slowly caramelise. (The browner your onions the darker your sauce - DO NOT BURN)
  • While the onions are cooking pulp the Chillies, Garlic and Ginger and puree the chopped tomato
  • When the onions are translucent and a nice soft brown add the garlic ginger chilli paste and the whole cumin seeds.
  • Stir and add red chilli powder, turmeric, cumin coriander powder and salt.
  • Add water, mix and simmer.
  • Add the pureed chopped tomatoes.
  • Simmer and cook until the oil separates from the tomato sauce.
  • Add the chicken and stir. (You may need to add a bit more water but do so sparingly).
  • Add diced green pepper. (Capsicum)
  • Simmer until chicken is cooked through, if the sauce is too watery allow curry to bubble uncovered.
  • Add garam masala and simmer for a further 5 minutes.
  • Taste and add salt if required and garnish with chopped coriander.
