Step-by-step

  • For the filling, combine all filling ingredients in a glass bowl, cover and let sit overnight, covered, stirring occasionally.
  • For the dough, make a mound of 4 cups of the flour on a pastry board or counter. Make a well in the center, and using a fork, begin to add in the remaining ingredients, mixing the dry ingredients with the wet ones by stirring with the fork until you have created a soft dough. (Add additional flour if the dough is still too sticky.)
  • Knead by hand for 3 to 4 minutes with a little additional flour as needed until the dough is smooth, then divide into 8 equal sized balls.
  • To make the cakes, covering the rest of the balls, take one and begin to run it through a pasta machine to flatten. Continue to lightly flour and pass through increasingly narrow openings, until the dough is about 1/4 inch thick. (I stop at number 3 to 4 on my roller attachment.)
  • Place the dough strip on the counter, and using a scalloped pastry wheel, run it along the outside edges of each side of the dough.
  • Next using the pastry wheel, cut the strip of dough in half lengthwise into two ribbons about 2 1/2 inches wide.
  • On each half of the ribbon, sprinkle on some of the walnut, raisin mixture and fold to close.
  • Starting at one end, begin to roll up the dough into a coil, using toothpicks to support it as needed. Continue until you have an 6 inch cake, and follow the same steps to use up all of the dough up in this manner. (See Photos Below.)
  • Preheat the oven to 325 degrees F. Place the cakes on a lightly floured baking sheet and bake for about 35 minutes or until lightly browned.
  • Melt the honey in a pot and brush each of the cakes lightly over the top.
  • Bake an additional 5 minutes.
  • Sprinkle with the candy sprinkles.
  • Let cool completely and then wrap in foil to store.
  • To serve, remove the toothpicks and cut into wedges.

A Housewife's Holiday Tradition: Italian Christmas Cake

The aroma of warm spices and sweet dough fills my kitchen every Christmas season. It's the scent of tradition, of family gatherings, and of the countless hours I've spent perfecting my Italian Christmas Cake recipe. This isn't just a cake; it's a story, woven into the very fabric of our holiday celebrations. I remember as a child, watching my Nonna knead the dough, her hands moving with a practiced grace, a silent symphony of flour and love. Now, years later, it's my turn to carry the torch, to share the magic of this recipe with my own children, watching their eyes light up as they help me roll and shape the delicate coils.

This cake isn't about speed or efficiency; it's about savoring the process. The slow, deliberate kneading of the dough, the careful layering of the filling, the anticipation as it bakes in the oven – each step is an opportunity to connect with the generations that came before me. It's a testament to the enduring power of tradition, a warm hug in the heart of the holiday season. The rich, nutty flavor, the delicate sweetness, the comforting texture – it's more than just a dessert; it's a symbol of family, warmth, and the enduring spirit of Christmas.

The recipe itself is a testament to simplicity and elegance. The ingredients are humble – flour, sugar, eggs, raisins, walnuts – yet when combined with love and care, they transform into something truly extraordinary. It's a reminder that the most cherished memories often come from the simplest of things. The filling, a luscious blend of raisins and walnuts, adds a delightful texture and a touch of rustic charm. The subtle sweetness complements the rich dough perfectly, creating a harmonious balance of flavors that is both satisfying and delightful.

There's an art to making this cake, a rhythm to the process that I've learned through years of practice. The rolling of the dough, the careful shaping of the coils, the precise baking time – each step is crucial to achieving the perfect result. Yet, even with its intricacies, this recipe is surprisingly accessible. Even a novice baker can create a beautiful and delicious Italian Christmas Cake with a little patience and a lot of love. The joy of sharing this cake with loved ones makes all the effort worthwhile.

More than just a dessert, this Italian Christmas Cake represents the heart of our family traditions. It’s a tangible link to the past, a delicious way to connect with our heritage, and a cherished memory that will be passed down through generations. So, this holiday season, gather your loved ones, roll up your sleeves, and embark on this culinary adventure. The result will be more than just a delicious cake; it will be a timeless treasure, a symbol of family, tradition, and the enduring spirit of Christmas.

This year, as I prepare the cake, I'll be thinking of my Nonna, her hands wrinkled with time, her smile as warm as the oven. And as we gather around the table, sharing slices of this cake, I'll know that the warmth and love poured into its creation will bring us all a little closer this Christmas.
