Step-by-step

  • Combine all seasoning mix ingredients.
  • Sprinkle the shrimp evenly with 2 tsp of the seasoning mix and set aside.
  • Preheat a heavy 10-inch skillet over high heat until hot.
  • Add the onions, bell peppers, celery, bay leaves, and 3 Tbs of the seasoning mix to the pan. Stir and cook until the veggies begin to brown, about 4 to 5 min. Add 1 cup of the apple juice and the garlic. Stir to deglaze the bottom of the pan.
  • Cook until the apple juice is GONE and the bottom of the skillet dries out, about 12 to 13 minutes. Spread the veggies out and continue cooking for 2 or 3 minutes until they are a rich brown, 2 or 3 minutes longer.
  • Add tomatoes and remaining seasoning mix, scraping the bottom of the pan again. Cook 2 minutes.
  • Stir in tomato sauce, stock, and remaining apple juice. Scrape the bottom of the pan, bring to a boil, and cook about 7 to 8 minutes.
  • Add the shrimp and cook just until they turn pink & curl up, about 3-4 minutes.
  • Serve immediately over rice.

Shrimp Orleans: A Taste of New Orleans in Your Kitchen

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a Herculean task. Weeknights are often a whirlwind of school pick-ups, homework help, and the ever-present to-do list. But even amidst the chaos, I crave moments of culinary escape – times when I can transport myself (and my family) to another place, another time, through the magic of food. This Shrimp Orleans recipe is one of those culinary escapes. It's a vibrant, flavorful dish that somehow feels both sophisticated and incredibly approachable, perfect for a busy weeknight dinner.

I stumbled upon this recipe – a slightly adapted version, of course, to fit my pantry staples and preferences – while researching some authentic New Orleans cuisine. The original recipe hinted at a rich culinary history, steeped in the heart of Louisiana. The aroma alone is enough to transport you to a bustling French Quarter kitchen, where the scent of sizzling shrimp and spices fills the air. The best part? It’s surprisingly easy to make, even on a Tuesday night.

The beauty of this Shrimp Orleans recipe lies in its simplicity and bold flavor profile. The shrimp are the stars, of course, plump and juicy, perfectly cooked until they achieve that beautiful pink hue. But it's the vibrant blend of spices – a harmonious blend of paprika, thyme, garlic, and a hint of cayenne – that truly elevates this dish to another level. The sautéed vegetables add a delightful textural contrast, while the apple juice adds an unexpected sweetness that balances the spice beautifully.

I’ve adapted the original recipe to suit my taste and lifestyle. I often use pre-chopped vegetables to save time, and I don’t hesitate to adjust the spice level to my family's preferences. Sometimes, I add a squeeze of fresh lemon juice at the end for a bright, tangy finish. The possibilities are endless, which makes this recipe all the more appealing. It’s a recipe that invites experimentation, a canvas for your culinary creativity.

The dish pairs wonderfully with fluffy white rice, providing a comforting base for the flavorful shrimp and sauce. It's a meal that satisfies, nourishes, and transports you – all within the comfort of your own kitchen. So, the next time you’re looking for a quick, delicious, and memorable meal, try this Shrimp Orleans recipe. It’s a reminder that even amidst the busy chaos of daily life, there’s always room for a little culinary adventure, a little taste of New Orleans magic, right on your dinner table.

Ingredients I used:

  • 1 lb peeled medium shrimp
  • 1 ½ c onions, chopped
  • 1/2 c celery, chopped
  • 1 c chopped green bell peppers
  • 1 can (14 ½ oz) diced tomatoes
  • 3 bay leaves
  • 1 tbsp sweet paprika
  • 1 ½ tsp garlic powder
  • 1 ½ tsp onion powder
  • 1 tsp dried oregano leaves
  • 1 tsp dry mustard
  • 1 tsp salt
  • 1 ½ tsp dried thyme leaves
  • 2 tsp dried sweet basil leaves
  • ½ tsp black pepper
  • ¼ tsp white pepper
  • ⅛ tsp cayenne pepper (or more, to taste)
  • 1 ½ c apple juice
  • 1 cup defatted seafood stock
  • ½ c tomato sauce
  • 1 tsp minced fresh garlic
  • 6 cups cooked long grain white rice (for serving)

Tips for success:

  • Use a heavy-bottomed skillet for even cooking.
  • Don’t overcrowd the pan when cooking the shrimp; cook in batches if necessary.
  • Adjust the amount of cayenne pepper to your preferred spice level.
  • Serve immediately for the best flavor and texture.

Enjoy your culinary adventure!
