Step-by-step

  • Cut up the lamb's fry into 1 cm thick slices.
  • Cut the bacon into 2 cm pieces. Put aside.
  • Put flour on a plate. Season it with salt & pepper. Coat the liver pieces with the seasoned flour. Put aside.
  • Reserve 2 tbsp of the remaining flour.
  • Thinly slice the onion and ginger. Crush the garlic. Chop the parsley. Put aside.
  • In a mixing bowl, whisk the gravy, chicken stock and the reserved flour together. Put aside.
  • In a frying pan, add 1 tbsp of oil. Increase heat to medium. Add the onion, ginger and garlic. Fry until softened. Remove from the pan and put aside.
  • Add 1 tbsp of oil to the pan. Add the bacon and fry until lightly browned. Remove from pan and put aside. Retain the oil in the pan.
  • Add the liver pieces to the pan and fry in batches until lightly browned on both sides. Remove from the pan when ready and put aside.
  • Add the butter to the pan. Add the gravy, chicken stock and flour mixture. Add the wine. Scrap the base of the pan. Stir to mix through and simmer for a minute.
  • Add the liver pieces, bacon, onion, ginger and garlic back to the pan and stir through.

  • Taste test and season with salt and pepper if necessary.
  • Add ½ of the chopped parsley and stir through.
  • Serve immediately with toasts or mash. Garnish with remaining parsley.

A Busy Mom's Weeknight Delight: Lamb's Fry and Bacon

As a working mom, time is my most precious commodity. Dinner needs to be quick, easy, and – most importantly – delicious enough to satisfy my family's rumbling stomachs after a long day. This Lamb's Fry and Bacon recipe has become a weeknight staple, a testament to the fact that gourmet doesn't have to mean complicated. The rich, savory flavors of the lamb's fry, perfectly complemented by the crispy bacon, are a winner every time. It's a dish that's surprisingly simple to execute, even when juggling work deadlines, school pick-ups, and the never-ending laundry pile.

The beauty of this recipe lies in its flexibility. I often adjust it based on what I have on hand. Sometimes I add a splash of red wine for a deeper, more complex flavor; other times, I skip the ginger and garlic for a simpler profile. The core ingredients – lamb's fry, bacon, and onion – remain constant, forming a delicious foundation that can be easily customized. It's a testament to the fact that good food doesn't need to be fussy. It just needs to be flavorful, satisfying, and, above all, easy to make.

My kids, initially hesitant about the "liver" aspect, have become enthusiastic fans. The secret, I think, is the bacon. The crispy, salty bacon provides a wonderful counterpoint to the slightly gamey flavor of the lamb's fry, making it palatable even for the pickiest eaters. And the gravy? Don't even get me started on the gravy! It's rich, thick, and utterly irresistible, the perfect vehicle for soaking up every last bit of flavor. I often serve it with a side of mashed potatoes or crusty bread – both excellent for absorbing that luscious gravy.

This recipe isn't just about convenience; it's about creating a comforting, family-friendly meal that everyone enjoys. It's a dish that nourishes both body and soul, and it’s a perfect example of how simple ingredients can create extraordinary flavors. I often find myself making double the batch – one for dinner tonight and the other for a quick and easy lunch the next day. The leftovers are just as delicious, if not more so, the flavors having melded together overnight.

Beyond the practical benefits, there’s a sense of accomplishment that comes with preparing a meal like this for my family. It's a small act of love, a way to show my family how much I care. And knowing that my family is happily munching away, their faces illuminated by the warm glow of the table lamp, makes all the effort worthwhile. It's a reminder that even in the midst of the chaos of daily life, there's always time for a delicious, home-cooked meal that brings us all together.

So, if you're looking for a quick, easy, and incredibly flavorful weeknight dinner that will please even the most discerning palates (even the little ones!), give this Lamb's Fry and Bacon recipe a try. You won't be disappointed. It's a recipe that's become a cherished tradition in our home, a small slice of culinary happiness amidst the whirlwind of motherhood.

Tips and Variations:

  • For a richer flavor: Marinate the lamb's fry in a mixture of red wine, herbs, and garlic for at least 30 minutes before cooking.
  • Spice it up: Add a pinch of red pepper flakes to the gravy for a little kick.
  • Make it a complete meal: Serve with roasted vegetables, a simple salad, or your favorite starch.
  • Customize the gravy: Experiment with different types of gravy or make your own from scratch.

This Lamb's Fry and Bacon recipe is more than just a meal; it's a testament to the power of simple, wholesome ingredients and the joy of creating delicious food for the people you love.
