St. Patricks Day is right around the corner And while we dont celebrate this holiday as much as we do the other holidays in our home I still like to do something a little different so the day does not feel like every other day In my home growing up my mom always made us a green breakfast and I find myself inclined to do the same for my children But instead of just coloring the same old pancakes green I thought we would give Mint Chocolate Chip pancakes a try And of course I used my family as my taste testers They were a hit for alland if you have kids you know that is saying something We modified a Buttermilk Pancake recipe and added some mint flavoring The first batch came out a little TOO minty but the second try we seem to have gotten the right mix I am hoping to figure out how to make these gluten and dairy free for me and have been doing some research on alternative ingredients

Whisking dry ingredients like flour, sugar, baking powder, baking soda, and salt thoroughly ensures the leavening agents distribute evenly, preventing dense spots in the finished crumb. Fold the chocolate chips in at the very end to keep them suspended in the batter rather than sinking to the bottom of the mixing bowl. When bubbles break on the surface and the edges look set and matte after about 2 minutes, flip the pancake once. Avoid pressing down on the cooked pancakes with a spatula, which squeezes out trapped air and ruins the fluffy texture. To store leftovers, let the cooked pancakes cool completely on a wire rack to prevent steam condensation from making them soggy. Layer cooled pancakes between sheets of parchment paper, place them inside a freezer-safe bag, and freeze for up to two months. Reheat frozen pancakes directly in a toaster or a 350 degree Fahrenheit oven for 5 minutes until warmed through, bypassing the microwave to maintain a crisp exterior.
