Williams Popovers

Favorite popover recipe. I use Pam spray for greasing muffin tins. For mini cut cooking time to 10 min when decreasing temp to 350. I also use olive oil instead of butter in batter.

Step-by-step

  • In mxing bowl, beat eggs with beater or mixer. Add flour, milk, olive oil and salt. Beat until smooth.
  • Spray tins with Pam.
  • Fill 6 to 8 regular size or 12 mini popover tins 1/2 to 3/4 full. Bake in oven at 475F for about 15 min.
  • Reduce oven to 350 and bake 25 to 30 min. For mini bake only 10 min. Prick with fork to let steam escape.

Crisp, deep-golden crusts shatter into hollow, steamy interiors that smell faintly of toasted grain and warm milk. Popovers rely entirely on steam expansion for their dramatic rise, making physical technique far more critical than expensive ingredients. Because eggs provide the necessary structural protein and liquid turns to vapor under high heat, exact execution dictates whether the batter balloons or collapses.

  • Beat the eggs, flour, milk, olive oil, and sea salt with a mixer until completely smooth to develop adequate gluten structure.
  • Preheat the oven to a blistering 475 degrees Fahrenheit to force rapid evaporation before the starches fully set.
  • Fill the tins between one-half and three-quarters full to allow vertical expansion room without spilling over the edges.
  • Prick each baked popover immediately with a fork upon removal from the oven to release trapped interior steam and prevent the crust from getting soggy.
  • Adjust the baking time down to 10 minutes at 350 degrees Fahrenheit if you choose to make mini popovers instead of standard sizes.

Standard muffin tins work adequately if dedicated popover pans are unavailable. Olive oil replaces butter efficiently while keeping unit costs low.
