Step-by-step

  • Preheat the oven to 350°F.
  • In a medium bowl, mix the cookie crumbs and melted butter to combine. The crumb mixture should hold together well when squeezed between your fingers.
  • Press the crust evenly into a 9 inch tart pan (it works with either a circle or a square pan).
  • Bake the crust for 10-12 minutes, or until it’s slightly golden brown and appears set.
  • Cool completely.
  • Raise the oven temperature to 400°F.
  • Place the peaches and raspberries in two separate medium bowls.
  • Sprinkle half the sugar and a little bit of salt over each fruit, and toss gently to combine.
  • Let macerate until the fruit appears juicy, 10-15 minutes.
  • Roast each fruit on their own baking sheet, as they will take different amounts of time.
  • Roast the peaches until tender, 15-20 minutes.
  • Roast the raspberries until just tender, 10-12 minutes.
  • Drizzle 2 tablespoons of honey over each tray of roasted fruit, and give one or two gentle tosses to combine.
  • Let each fruit mixture cool completely on their baking sheet.
  • Arrange the fruit inside the cooled crust. If the fruit is super juicy, you can sort of drain it from the excess juice with a slotted spoon before putting into the crust. If the juice on the baking sheet is more jammy in texture, you can scoop it right into the crust with the fruit.
  • Serve with whipped cream. (The tart should be served relatively soon after assembly. Depending on the combination of fruits and cookie type used, the crust can start to absorb moisture from the fruit after 2-3 hours, and may eventually become soggy.)

My Summer Escape: A Roasted Raspberry Peach Tart Adventure

The sun dipped below the horizon, painting the sky in hues of orange and pink. The air, still warm from the day's heat, carried the sweet scent of ripe peaches and raspberries. It was the perfect evening to finally bake that tart I'd been dreaming about all week – a roasted raspberry peach tart, a burst of summer sunshine on a plate.

Baking has always been my sanctuary, a quiet space where I can escape the daily grind and reconnect with myself. Whether I'm tackling a complicated sourdough or whipping up a simple batch of cookies, the rhythmic mixing, measuring, and baking is a meditation of sorts. This tart, however, felt different. It was more than just a dessert; it was a celebration of the season, a way to capture the fleeting beauty of summer in a single, delicious bite.

The process itself was surprisingly straightforward. The crust, made from simple ginger cookie crumbs and melted butter, came together quickly. I loved the ease of it; a welcome contrast to the intricate pastries I sometimes attempt. The real magic happened with the roasting of the peaches and raspberries. The oven transformed the raw fruit into something exquisite—soft, succulent, and deeply flavored. The gentle sweetness of the peaches played beautifully against the tartness of the raspberries, creating a harmonious balance of flavors. The honey drizzle added a touch of extra sweetness and a luxurious shine.

As I arranged the glistening fruit within the golden-brown crust, I felt a sense of accomplishment. It wasn't just about the finished product, though the tart was undeniably gorgeous. It was about the journey, the quiet moments spent in the kitchen, the connection to nature through the use of fresh, seasonal ingredients. It was a reminder to savor these small pleasures, these moments of simple joy. This tart is more than just a dessert; it's a taste of summer, a little piece of happiness.

The first bite was heavenly. The crisp, buttery crust gave way to the sweet and tart explosion of roasted fruit, each bite a reminder of lazy summer days spent basking in the sun's warmth. Served with a dollop of freshly whipped cream, it was the perfect ending to a perfect day. The tart was devoured quickly, leaving behind only a faint trace of honey and the memory of summer's sweet embrace.

But what really makes this tart special, beyond its undeniable deliciousness, is its versatility. The recipe is a foundation upon which you can build your own culinary masterpiece. Experiment with different fruits—strawberries, blueberries, or even nectarines would be delicious. Use different types of cookies for the crust—chocolate, graham cracker, or even shortbread. The possibilities are endless.
