Apple Pudding Cake

I had a dear friend give me this recipe and I absolutely love it. It is an extremely moist cake, no perfect cuts with this one, but one that will have you licking the knife and edges of the pan with each piece cut for your guest. I make the lower in sugar version and my husband, kids and grandbabies love it. Thanks for sharing, Teresa

Step-by-step

  • Heat oven to 350 degrees. Spray a 9 x 13 pan with Pam.
  • Combine cake mix, apple pie spice and milk in mixing bowl. Mix well by hand. Stir in apple. Spread evenly in sprayed pan.
  • Combine brown sugar & hot water, in a small bowl, mix well and pour evenly over cake batter.
  • Bake at 350 degrees for 25 - 35 minutes or until toothpick inserted in center comes out clean. Spoon warm dessert in dishes and top with Cool Whip. Yummy!!!!

Unlike a traditional layered cake that relies on chemical leaveners for structural rise, self-saucing pudding cakes utilize a physics-driven separation process where liquid poured over the batter migrates to the bottom during baking to form a rich sauce. Understanding this thermal dynamic prevents common failures in texture. When combining the dry mix, spice, and milk, mix only until hydrated to prevent the gluten networks from developing too much elasticity, which would trap the rising moisture instead of allowing the sugar syrup to settle properly.

The Mechanics of Pouring and Baking

Water temperature dictates how the sauce behaves initially; heating the liquid to between 120 and 130 degrees Fahrenheit ensures the brown sugar dissolves completely before hitting the oven, preventing a grainy sediment layer from hardening on the bottom of the pan. Pour the hot sugar liquid gently over the batter using the back of a spoon to diffuse the impact force, keeping the unbaked cake layer intact rather than punching holes into the batter. Bake at 350 degrees Fahrenheit for 25 to 35 minutes, watching closely for the edges to pull slightly away from the metal sides and a wooden toothpick inserted into the center to emerge free of wet batter. Glass baking dishes retain heat longer than aluminum pans, meaning you should pull the dessert out closer to the 25-minute mark if you prefer a looser, more fluid pudding consistency at the base.

  • Ensure the water thermometer reads strictly under 130 degrees Fahrenheit to prevent prematurely cooking any egg solids present in commercial cake mixes.
  • Chop the apple into pieces no larger than one-quarter inch so the fruit distributes evenly rather than sinking to the bottom.
  • Serve the portions warm within hours of baking, as the starch matrix continues absorbing liquid as it cools down.
