Pizza Stuffed Sweet Potatoes

We are headed to West Palm Beach, Florida this weekend to compete in the CrossFit Games Southeast Regionals with our team. We have been trying to practice the workouts together, which has us coming home later than usual, resulting in dinner being served later than usual too. Since I work from home, sometimes I am able to whip something up in the afternoon and then just reheat it for dinner—it's like some twisted version of leftovers. With this, I had some previously roasted sweet potatoes in the fridge, so I just popped those out, assembled the pizza deliciousness, reheated everything, and we were able to eat at a reasonable hour.

Step-by-step

  • Preheat your oven to 400°F.
  • Prick and place your sweet potatoes on a baking sheet. Roast until the insides are soft and mushy, about 45 minutes. (Microwaving is not recommended.)
  • While the potatoes are roasting, whisk together the sauce ingredients. Taste and adjust to your preferences, then set aside.
  • While the potatoes are still roasting, in a large sauté pan, crumble and brown the sausage. Remove the meat from the pan, reserving the rendered fat.
  • Toss the mushrooms and onions in the reserved sausage fat. Cook until the mushrooms have browned and the onions are soft.
  • Once the potatoes are done, slice them in half (lengthwise) and arrange the halves nicely on the baking sheet. Smash and loosen the insides with a fork.
  • Ladle a few spoonfuls of sauce on top of the sweet potato, followed by the mushroom/onion sauté, sausage, and olives.
  • If using, add some finely grated Parmesan cheese to help glue everything together.
  • Return the baking sheet to the oven for a couple of minutes to reheat.

The best part? You can prep most of it ahead of time!

I discovered this recipe during a particularly intense period of training for the Southeast Regionals. We were spending long hours at the gym, and getting home to cook a proper dinner felt like a monumental task. I wanted something filling, flavorful, and, most importantly, something that could be mostly prepped in advance. That’s how this delicious creation came to life! I already had some roasted sweet potatoes in the fridge – leftovers from a previous meal – so I decided to get creative. The result? A surprisingly satisfying and healthy meal that even my teammates raved about.

The beauty of this recipe is its adaptability. Feel free to swap out the toppings to suit your taste and whatever you happen to have on hand. I often add extra veggies like spinach or peppers, or switch up the sausage for ground chicken or turkey. It’s a blank canvas for your culinary creativity. You can even prepare the sweet potatoes and the sausage and vegetable mixture the day before, which makes assembling the final dish a breeze on a busy weeknight.

This recipe isn't just about convenience, it's also surprisingly nutritious. Sweet potatoes are packed with vitamins and fiber, providing a good base for the pizza-inspired toppings. The sausage adds protein, while the mushrooms and onions offer a nice mix of flavors and added nutrients. I’ve found that this dish satisfies those late-night cravings without leaving me feeling sluggish or bloated. It’s the perfect balance of indulgence and healthy eating.

The recipe is a lifesaver on those days when even the simplest of cooking feels daunting. The prep time is minimal, and the cooking time is even shorter.
