Step-by-step

  • Make sure you use a large 6 quart slow cooker or Instant Pot for this recipe.
  • Dump your tomato sauce, olive oil, garlic, hot pepper relish and Italian seasoning into your slow cooker and stir well.
  • Cut your squash in half and scoop out the seeds.
  • Place your 2 squash halves face down into your slow cooker.
  • Roll your ground sausage into meatballs, then fit as many as you can in the sauce around the squash. I was able to work in about a half pound worth.
  • Cook on High for 3 hours or cook on low for 5 hours.
  • Use a large fork to pull the “spaghetti” out of your squash, then top with your meatballs and sauce.
  • Garnish with parsley if you feel fancy, and enjoy!

My Go-To Weeknight Paleo Meal: Spaghetti Squash & Meatballs

As a busy working mom, finding time to cook healthy, delicious meals can feel like a Herculean task. Between juggling work deadlines, school pick-ups, and keeping the house somewhat tidy, the last thing I want to do is spend hours in the kitchen. That’s why I’m obsessed with recipes that are both quick and nutritious, and this Paleo Spaghetti Squash & Meatballs recipe is a perfect example. It’s become a weekly staple in our house, and I'm thrilled to share it with you.

The beauty of this dish lies in its simplicity. There’s no complex chopping or precise measurements needed. I often prep the ingredients while I’m catching up on emails, and then simply toss everything into my slow cooker before heading off to work. When I get home, the house smells incredible, and dinner is practically ready. The slow cooker does all the hard work, leaving me with minimal cleanup and a delicious, satisfying meal.

Why I love this recipe:

• Speed and Convenience: The slow cooker is my best friend. This recipe requires minimal prep time and cooks itself while I focus on other things.

• Healthy and Nutritious: Paleo-friendly, this dish is packed with protein and flavor, without the refined carbs or processed ingredients.

• Flavorful and Satisfying: The combination of tender spaghetti squash, savory meatballs, and rich tomato sauce creates a flavor explosion that will please the whole family.

• Customizable: Feel free to experiment with different herbs and spices to tailor the flavors to your liking. I sometimes add a pinch of red pepper flakes for a little extra kick, or a sprinkle of fresh basil for a burst of freshness.

This recipe isn't just for weeknights either. It's perfect for meal prepping for busy days ahead. I often make a double batch on the weekend, portion it out into individual containers, and grab a ready-to-eat meal throughout the week. It reheats beautifully and tastes even better the next day!

Beyond the basics:

While this recipe is fantastic on its own, there are several ways you can customize it further. Consider adding some vegetables like chopped zucchini or bell peppers to the slow cooker for extra nutrients. You could also substitute the ground Italian sausage with ground turkey or chicken for a leaner option. Or, if you're feeling adventurous, experiment with different types of squash, like butternut or acorn squash, for a unique twist.

This Paleo Spaghetti Squash & Meatballs recipe is more than just a meal; it’s a testament to the fact that healthy eating doesn't have to be complicated or time-consuming. It's a delicious, satisfying, and effortless dish that’s perfect for busy weeknights or leisurely weekends. I encourage you to try it and see for yourself!

So ditch the takeout menus and embrace the simplicity of this amazing recipe. Your family (and your sanity) will thank you for it!
