Step-by-step

  • Bring 4 1/2 quarts water to rolling boil, covered, in large stockpot or Dutch oven.
  • While water comes to boil, bring 1 cup heavy cream and butter to simmer in 3- to 4-quart saucepan over medium heat; reduce heat to low and simmer gently until mixture reduces to 2/3 cup, 12 to 15 minutes. Off heat, stir in remaining 1/2 cup cream, 1/2 teaspoon salt, and pepper.
  • Add 1 tablespoon salt and pasta to boiling water; cook pasta, then drain. Meanwhile, return cream mixture to simmer over medium-high heat; reduce heat to low and add pasta, Parmesan, shrimp, Smoked salmon, and nutmeg to cream mixture. Cook over low heat, tossing pasta with tongs to combine, until sauce coats pasta and cheese is melted, 1 to 2 minutes.
Can the sauce emulsify before the noodles overcook? Managing this dish requires understanding how dairy fats and starches interact under heat. Achieving the correct consistency relies entirely on precise reduction and timing.

The Science of Cream Reduction

Simmering heavy cream and butter drives off excess water content, concentrating the milk solids necessary to coat the back of a spoon. Reducing one cup of cream down to two-thirds of a cup transforms the liquid base from watery to velvety. Whisking continuously prevents scorching at the bottom of the pan during this 12-to-15-minute window.

Starch Management and Emulsion

Tossing the drained pasta directly into the warm cream mixture allows the surface starches from the noodles to bind with the melted Parmesan cheese. Adding the cheese off the high heat prevents the dairy proteins from seizing into grainy clumps. Fresh pasta cooks rapidly in a rolling boil, requiring strict attention so the texture remains al dente rather than mushy.

Protecting Delicate Seafood Textures

Overheating precooked shrimp and smoked salmon turns them rubbery and dry. Folding these proteins in during the final one to two minutes of low-heat tossing warms them through without altering their structure. Grating fresh nutmeg into the finish adds aromatic depth without overpowering the delicate salinity of the fish.
