Tuna and Rice Bowl

I use Annie Chuns Rice Express White Rice for this recipe. Any sort of tuna works just fine, but I usually use Bumble Bee tuna in the pouch. This recipe can be improved with other ingredients, or made with the simplest of ingredients. Mine is just that.

Step-by-step

  • Take your tuna out of the can/pouch and empty into a bowl
  • Take your Annie Chun's Rice Bowl, peel back top covering, leave on the rice bowl.
  • Cook the rice bowl in microwave for exactly 1 minute (maybe 1:15-1:30, microwaves vary in cooking time)
  • After cooking is done, mix rice together with tuna evenly. Add Mayo, Soy sauce, salt, pepper, and optional hot sauce into bowl.
  • Mix up evenly, and ENJOY :)
Unlike a traditional Japanese donburi where hot proteins rest atop steamed grains, this assembly requires thorough integration. Thorough mixing transforms individual components into a cohesive dish. Proper execution avoids common pitfalls that ruin the texture and balance of the meal.

Moisture Control

The primary error cooks make involves excess liquid. Albacore tuna packed in water must be drained thoroughly using a fine-mesh sieve for at least 60 seconds. Trapped water dilutes the mayonnaise and makes the rice pasty. Microwaving the rice for precisely 60 to 90 seconds ensures steam escapes without drying out the grains. Fold the rice while still warm so starch molecules absorb the seasoning.

Fat Distribution

Mayonnaise acts as an emulsifier holding the soy sauce and hot sauce together. Adding soy sauce directly to the tuna before the fat creates uneven pockets of sodium. Whisk the mayonnaise, soy sauce, and black pepper in a separate bowl first if you want completely uniform coating. Limit the hot sauce to two splashes to prevent capsaicin from overpowering the delicate fish proteins.

Temperature and Rest

Lukewarm service yields the best texture. If the rice exceeds 140 degrees Fahrenheit when the mayonnaise is added, the emulsion can break and release oil. Let microwaved rice vent for 30 seconds before combining. Consume immediately because rice starches retrograde rapidly upon cooling, hardening the texture within 20 minutes.
