Hearty Chicken Corn Chowder

My family really enjoys this recipe. It's rich in flavor and makes you want to go back for another serving. The biggest problem with a lot of chowders is not enough flavor and having to add crackers or lots of salt to it; you won't need to with this!

Step-by-step

  • Cook all sliced bacon in a large skillet ( make sure the skillet is atleast a 9 x13 and is deep to hold all the ingrediants). Take bacon out set aside.
  • DO NOT DUMP GREASE!!! leave grease and add chopped onion, garlic and diced potatoes.cut bacon in small pieces and add into the potatoes, onion and garlic. Simmer with cover on stirring occassionally.
  • Once grease has desolved into potatoes add one can of chicken broth, simmer with cover on until its absorbed and add the other can. Continue to stir occassionally.
  • Once potatoes are fully cooked add corn, heavy cream, and chopped up chicken.
  • Let it cool before you serve!

Building Flavor Foundations

Many home cooks make the mistake of draining bacon fat, thereby discarding a vital aromatic medium that carries fat-soluble flavor compounds essential for building deep savory notes in chowders. Render the bacon completely over medium-low heat until crisp, leaving the rendered fat in the vessel to sweat the sweet onions and minced garlic. Russet potatoes, possessing a high starch content, will naturally break down slightly during the simmering phase to thicken the broth without requiring an extraneous roux. When evaluating doneness without a thermometer, pierce a potato cube with the tip of a paring knife; it should slide through the center with zero resistance while holding its structural shape.

Adapting for Dietary Needs

Dairy-free modifications require thoughtful substitution ratios, meaning full-fat canned coconut milk can replace the heavy cream at a one-to-one volume ratio while introducing a subtle sweetness that complements sweet corn. Store leftovers in an airtight glass container within the refrigerator for up to four days, though be aware that dairy-heavy soups should be reheated gently over low heat to prevent the emulsion from breaking and separating into an oily sheen.
