Smart Substitutions and Adjustments

Swapping the ground beef for finely textured textured vegetable protein cuts the grocery bill significantly while retaining the necessary savory base for the casserole. Drain rendered fat thoroughly after browning meat to prevent the tortilla layers from becoming soggy during baking. Using a cast-iron skillet for the meat mixture retains heat evenly across the burner before assembly.

Scaling for Different Yields

Adapting this 6-serving dish requires adjusting pan sizes proportionally to maintain structural integrity. Halving the quantities fits neatly into an 8x8-inch baking dish without altering the 350 degree Fahrenheit oven temperature. Doubling the recipe scales easily into a standard full-size hotel pan, though baking time should increase by 10 minutes to ensure the center reaches a bubbling state.

Freezing and Reheating Guidelines

Assembling the casserole entirely without baking allows for reliable freezer storage up to 3 months when wrapped tightly in heavy-duty aluminum foil. Thaw frozen portions completely in the refrigerator for 24 hours prior to cooking. Reheat thawed leftovers covered at 325 degrees Fahrenheit for 25 minutes until the cheese bubbles actively around the edges.
