Step-by-step

  • I used a pastry blender to chop up the chickpeas and mix them in with the ground turkey.
  • Combine all the other ingredients with the mixture and form into 8 patties.
  • I broiled them on both sides on a cookie cooling rack placed on top of a cookie sheet for a 5+ minutes, but you could grill them or prepare them how you like.
  • Add cheese or condiments with your favorite bread and enjoy!

Textural Integration Through Mechanical Force

Ground turkey lacks inherent structural integrity when formed into patties without binders. Incorporating drained garbanzo beans supplies starch and protein matrices that hold the meat together during cooking. Mashing the legumes thoroughly before combining prevents dense pockets from forming within the patties. Using a pastry blender breaks down the bean skins efficiently without turning the mixture into a purée, yielding distinct bites rather than uniform paste.

Moisture Management and Seasoning Distribution

Condiments function as internal hydrating agents in lean poultry preparations. Mustard contains vinegar that breaks down surface proteins, while sriracha provides capsaicin and soluble sugars that caramelize under high heat. Distributing the salt and black pepper evenly throughout the raw meat prevents localized pockets of seasoning. Fold the liquid condiments into the turkey and bean mixture gently to avoid overworking the protein strands, which causes tough patties.

Cooking Surface and Heat Application

Elevating patties on a wire rack above a sheet pan allows circulating heat to render excess moisture away from the bottom surface. Broiling requires positioning the rack precisely four inches below the heating element to achieve proper browning without burning the exterior. Cooking times average five minutes per side depending on the exact thickness of the shaped portions. Dietary adaptations remain simple since the base mixture contains no dairy or gluten, allowing straightforward pairing with alternative buns.
