Step-by-step

  • In a large skillet heat up 4 tbsp of olive oil.
  • Prepare a dipping station with the beaten egg in a bowl and the panko in another.
  • Dip the chicken in the egg, then in the panko bread crumbs, pressing on each side, to cover the chicken with the panko bread crumbs.
  • Fry the chicken in the oil for about 4 minutes on each side until crispy and golden.
  • Reserve on a plate.
  • In the same pan add the garlic and onion and cook for 5 minutes until the onion gets translucide.
  • Add in the chicken broth, lemon juice and lemon zest.
  • Put the rice in a baking dish.
  • Pour the broth and onion over the rice, salt and pepper to taste.
  • Place the chicken breast on top (don't worry if some of the broth goes a little over the chicken).
  • Place the lemon slices on top of the chicken.
  • Sprinkle some parsley on top.
  • Cover with aluminum foil tightly.
  • Bake in a preheated oven at 350 F for 35 minutes.
  • Remove the foil and continue baking uncovered for another 10 minutes.
