Pastelillos (Puerto Rican Empanadas)

I have tried several variations of this recipe and this is my favorite so far. You can adapt it to your taste. Most recipes include green olives or tomato sauce; however, I have never had them that way. My fiance taught me to make them with mozzarella, but so far the Kraft blend with cream cheese has been the most popular in my house. You can also replace beef with shredded chicken or bake rather than fry.

My Favorite Pastelillos Recipe: A Taste of Home

As a busy working mom, finding time to cook delicious and satisfying meals can be a real challenge. But for me, cooking isn't just about sustenance; it's about connecting with my heritage and sharing a piece of my culture with my family. That's why I hold my Pastelillos recipe so dear – it's a taste of home, a quick and satisfying meal, and a beautiful way to carry on a family tradition.

I've experimented with countless variations of this Puerto Rican classic, and this recipe truly stands out as my absolute favorite. It’s simple, adaptable to your personal preferences, and always delivers a mouth-watering result. Forget complicated techniques and endless ingredient lists – this recipe is all about straightforward goodness.

One thing I've learned over the years is that even the simplest recipes can have endless variations. Many traditional pastelillo recipes call for green olives or tomato sauce, but my kids aren’t exactly fans of those additions. My fiancé, bless his heart, introduced me to using mozzarella cheese, but surprisingly, the Kraft 3-cheese blend with cream cheese has become the unanimous favorite in our household. That’s the beauty of cooking, the ability to adjust it to suit your family's tastes!

Another great thing about this recipe is its versatility. Feel free to substitute the ground beef with shredded chicken for a lighter meal. And if frying isn't your thing (or if you're aiming for a slightly healthier option), you can bake the pastelillos instead of frying. Simply place them on a baking sheet lined with parchment paper and bake at 375°F (190°C) for about 15-20 minutes, or until golden brown. It’s that easy!

The best part? This recipe is incredibly quick to make. On a busy weeknight, the speed and simplicity of this recipe makes it a lifesaver. I love that I can have a delicious, homemade meal on the table in under an hour, even after a long day at work.

Beyond the convenience, it’s the memories and love that make this recipe so special. Learning to make pastelillos from my fiancé was more than just a cooking lesson; it was a bonding experience, a way to share a piece of his culture with me. And now, getting to share this recipe with my kids, seeing their faces light up when they take that first bite, is a priceless reward.

So, whether you’re a seasoned cook or a kitchen novice, give this recipe a try. It’s a perfect blend of tradition and adaptability, a celebration of family and heritage, and a delicious meal that will quickly become a family favorite. Enjoy the warmth, the flavors, and the joy of creating something special in your own kitchen.
