Step-by-step

  • Pastry:
  • Combine flour, butter and salt in the bowl of a food processor fitted with a metal blade. Pulse until mixture resembles coarse crumbs. (I don't have a food processor, so I combined it as I would for scones, grated frozen butter into the flour and salt, and used a pastry cutter tool until it looked like crumbs).
  • Beat egg with lemon juice, adding enough ice water to measure 1/3 cup; add to flour mixture and process (mix with a fork),until mixture begins to clump; form into a disk and chill. Preheat oven to 375f degrees.
  • Roll pastry between two sheets of parchment paper, lightly floured, to about 1/4 inch thick. Remove top piece of parchment and slide the pastry onto a large baking sheet or pie plate.
  • Filling:
  • Measure 1 tablespoon of cream and reserve.
  • Stir mashed potatoes with salmon, cheese, remaining cream, onion, egg, lemon juice, dill, garlic, salt and pepper until well combined. Spoon salmon mixture into the centre of the prepared pastry round.
  • Fold in the edges of the pastry, leaving the centre of the filling exposed; brush the crust with the reserved cream; bake for 50 minutes or until pastry is golden.

A Traveler's Delight: Rustic Salmon Pie

The aroma of baking pastry filled my tiny mountain cabin, a welcome contrast to the crisp, pine-scented air outside. I'd spent the last few days hiking through breathtaking landscapes, my backpack heavier with each passing sunrise. The thrill of discovering hidden waterfalls and scaling rocky peaks was exhilarating, but the simple pleasure of preparing a comforting meal in my cozy haven was equally rewarding. This Rustic Salmon Pie wasn't just dinner; it was a celebration of the journey, a testament to the resourcefulness born from days spent navigating trails and embracing the unexpected.

The inspiration struck when I stumbled upon a small, family-run grocery store nestled in a picturesque village. Amidst the locally sourced vegetables and artisan cheeses, I spotted two cans of sockeye salmon—a treasure trove of protein after days of energy-intensive hikes. The idea of a hearty pie, utilizing the easily accessible ingredients, immediately took root. The flaky pastry, the creamy salmon filling, the hint of lemon and dill—each element whispered of home, a comforting notion miles away from the familiar comforts of city life. It’s a recipe that's become a staple on my travels, easily adaptable depending on what fresh ingredients I find along the way. The beauty of this pie lies in its simplicity; the ability to improvise and adapt the filling based on available ingredients makes it a versatile companion for any adventurer.

The process itself became a meditative ritual. The rhythmic crumbling of the butter into the flour, the gentle folding of the pastry, the careful stirring of the filling—each step a moment of mindful connection, a quiet counterpoint to the adventure unfolding outside. The result? A pie that transcends mere sustenance; it’s a culinary postcard, a tangible representation of the journey, a warm hug in a cold mountain evening. The memory of savoring that first bite, the perfect harmony of textures and flavors against the backdrop of the majestic mountains, is one I will cherish long after the trail fades from memory.

Beyond the practical aspects, this recipe embodies a broader philosophy I’ve adopted throughout my travels: embrace simplicity, celebrate resourcefulness, and savor the moments. It is a testament to the fact that extraordinary experiences don't always require elaborate preparations or extensive resources. Sometimes, the most profound moments are found in the simplest of things; a delicious, homemade meal enjoyed in the heart of nature, miles away from the everyday.

The satisfying crunch of the pastry, the rich creaminess of the salmon filling, the subtle tang of the lemon, and the aromatic whisper of dill—these simple pleasures woven together to create a symphony of flavor. And, perhaps more importantly, this recipe embodies the joy of creation amidst the unexpected. It's a reminder that even the most challenging journeys are made sweeter by moments of comfort, connection, and, of course, delicious food.

So, whether you're an experienced hiker, a weekend camper, or simply someone seeking a heartwarming, easy-to-make meal, I urge you to give this Rustic Salmon Pie a try. It's more than just a recipe; it's an invitation to embrace simplicity, celebrate resourcefulness, and savor the unexpected delights that life throws your way. Because sometimes, the most memorable meals are the ones enjoyed far from home, surrounded by the beauty of nature and the warmth of a well-deserved reward.
