Step-by-step

  • Buy a fresh turkey 2-3 days before Thanksgiving (or frozen a week in advance, allowing 4 days to defrost).
  • Remove the giblets and neck from the turkey cavity.
  • Rinse the turkey inside and out and pat dry.
  • Rub half an orange inside and out the turkey, squeezing the juice over and in.
  • Brush the outside with a few tablespoons of orange concentrate.
  • Generously sprinkle salt, pepper, and garlic salt inside and out.
  • Quarter an onion and a navel orange. Place half of each in the cavity and half in the roasting pan.
  • Add the neck and giblets to the pan.
  • Add 2-3 cups of chicken stock to the pan.
  • Place the turkey on a rack in the roasting pan.
  • Heat the oven to 325 degrees.
  • Calculate cooking time at 15 minutes per pound (or 1 hour per 4 pounds).
  • After 2-3 hours, cover the breast with foil to prevent overcooking.
  • Check the breast temperature with a thermometer (160-165 degrees).
  • If needed, cook the wings and legs separately until crispy.
  • Let the turkey rest, covered with foil, for 30-45 minutes before carving.
  • Carve the breasts, legs, and wings and serve.
