Step-by-step

  • Add celery and onions to stick of butter. Use salt and pepper. Add chicken stock, bay leaf and turkey neck. Bring to boil and simmer for at least an hour.
  • Put bags of stuffing in large bowl, add walnuts, cranberries and apples. Let broth cook down. (remove neck and bay leaf. Strain celery and onion) DO NOT THROW OUT BROTH! ADD CELERY AND ONIONS TO STUFF MIXTURE.
  • SLOWLY ADD BROTH, mix into stuffing until wet but not soaked! Mix well. (I use my hands).
  • If you stuff bird, use a handful at a time and a small piece of butter.
  • Add remaining mixture to baking dish with dabs of butter. Bake until crispy on top. About 30-45 min before turkey is done.
