Step-by-step

  • Place mini marshmallows and cut up slices of 1/2 Cup of the butter in a microwave safe bowl and microwave on high for two minutes. If butter is not completely melted, microwave for an additional 15 seconds at a time until it is. Stir until you have a smooth mixture.
  • Pour in Mini Nilla Wafers and stir until they are all completely coated with marshmallow mixture. Butter a 9x13 baking dish and then pour the mixture into your baking dish. Press it down evenly into all of the corners making it as level and even on top as possible. Put it in the fridge to cool while you mix the caramel layer.
  • In a heavy 2 quart pan combine 1 Cup of the butter, brown sugar, corn syrup and sweetened condensed milk. Bring it to a boil at just under medium heat stirring constantly. Boil for 5 minutes while continuing to stir preferably with a wooden spoon so as not to scorch your caramel. When five minutes are up, remove from heat and continue to stir/beat with a wooden spoon for an additional 3 minutes. Your sauce will start to thicken up. Stir in 2 Tablespoons of the butter until it melts and your chocolate is a good spreading consistency. Remove your dish from the fridge and spread the chocolate sauce evenly on top making sure to spread it into the corners and as evenly as possible. Put your dish back in the fridge and cool for an additional 30 minutes to an hour. After they are nice and chilled, them cut them into squares and serve!

My Unexpected No-Bake Dessert Adventure: Twixie Bars

But this week, a craving for something sweet and satisfying hit me like a ton of bricks. Something rich, decadent, and yet, miraculously easy to make. Enter the Twixie Bars – my unexpected dessert hero.

I stumbled upon this recipe while browsing online, initially drawn in by its promise of a no-bake treat. As someone who avoids the oven like the plague on busy weeknights, this was music to my ears. The ingredients were simple, things I usually had on hand, and the steps seemed surprisingly straightforward. I envisioned a quick, easy dessert project that would satisfy my cravings and maybe even impress my family. What I didn’t expect was how incredibly addictive these bars would turn out to be!

The process itself was a delightful surprise. The first step, creating the cookie base, was a satisfying blend of melting marshmallows and mixing in those crunchy Nilla wafers. It was strangely therapeutic, a small moment of calm in the midst of my chaotic week. The caramel layer followed, a rich, buttery concoction that bubbled away on the stovetop, filling the kitchen with a warm, inviting aroma.

The magic, however, happened with the final chocolate layer. The glossy, smooth chocolate coating was the perfect finishing touch, transforming a simple concoction into something truly special. The whole process took less than an hour, a small investment of time that yielded a big reward: a tray of irresistible, melt-in-your-mouth treats.

But the best part? My family went crazy for these bars. My kids devoured them, fighting over the last few squares.
