Step-by-step

  • Toss largely cut florets from 2 Cauliflowers, 2 peeled and cubed large Eggplants, 5-6 peeled and coarsely chopped carrots, 1 diced Red Bell Pepper, 1 diced Yellow Bell Pepper, 1 medium sized peeled and cubed Sweet Potato, salt and very little water in a very large pressure cooker. Be careful with the water, the veggies release a lot of water. Pressure cook for 20-30 mins.
  • Saute finely chopped green chilis, garlic and diced onion in an instant pot. Add salt, 2-3 spoons full dhana/jeera, 1 spoon full turmeric powder, 1/2 spoon full garam masala. Add 2 chopped Roma tomatoes and 3 pulped tomatoes. Squeeze 1 whole lime to the gravy.
  • Open pressure cooker carefully after it's cooled down. If there is too much water, try to drain it. Mash everything with a masher. Once it's all like mashed potato, add it to the gravy and mix. Taste it. Add salt or more masala if needed. Add chopped cilantro.
  • On the side, boil frozen sweet peas. Add it to the Pav Bhaji or don't.
  • Use French Brioche buns. Top the Bhaji with diced onions with chopped cilantro drizzled with lime, nylon sev, and maybe diced tomatoes.
  • Freeze 1/2 or even in 2 containers for 2 more meals for later. Put it in the fridge the night before eating it again. Warm it up in a pot with a little oil over the stove.

Jigna's Healthy Pav Bhaji: A Busy Mom's Delicious and Convenient Recipe

As a busy mom, time is always of the essence. Finding healthy and delicious meals that are also quick and easy to prepare can feel like a constant struggle. That's why I've perfected this recipe for Jigna's Healthy Pav Bhaji – a vibrant and flavorful Indian dish that's surprisingly simple to make, even on the busiest of days. This recipe isn't just about feeding my family; it's about creating moments of connection around a shared meal, knowing that I'm providing them with a nutritious and satisfying option.

The beauty of this Pav Bhaji lies in its versatility. I often make a large batch, enough for several meals. Half goes straight to our dinner table, while the other half is carefully portioned and frozen for future use. This means I always have a delicious, healthy meal ready at a moment's notice. No more frantic last-minute meal planning or resorting to unhealthy takeout! One of the secrets to my success is utilizing a pressure cooker. It significantly reduces the cooking time, freeing up my precious time for other tasks while still delivering tender, flavorful vegetables.

The ingredients are simple, readily available, and can easily be adjusted to suit your family's preferences. I use a mix of colorful vegetables – cauliflower, eggplant, carrots, bell peppers, and sweet potatoes – to create a vibrant and nutritious dish packed with essential vitamins and minerals. The spices add a warm, inviting aroma that fills the kitchen, signaling the delicious meal to come. Feel free to adjust the amount of chili to your spice tolerance; my kids are less adventurous, so I tone down the heat. Adding a squeeze of lime at the end brightens the flavors and adds a touch of freshness.

The best part? The cleanup is minimal. I usually use my instant pot for the sautéing process, and because everything is cooked in one pot, there's less washing up involved. It's a win-win situation for a busy mom! I serve my Pav Bhaji with soft, fluffy brioche buns, adding a layer of diced onions, cilantro, and a drizzle of lime for an extra burst of freshness. You could also include nylon sev for added texture, and even some diced tomatoes, but that's always based on preference.

Beyond the practical aspects, this Pav Bhaji represents something more to me. It's a celebration of family time and nourishment, a symbol of my love and care for my family. It's a reminder that even amid the chaos of daily life, taking time to cook a healthy, delicious meal can create lasting memories and nurture the bonds between us.
