Step-by-step

  • Mix all remaining ingredients (except onions, oil and meat) in slow cooker.
  • Option 1: You can add the meat and chopped onions directly to the slow cooker.
  • Option 2: For extra flavor, take a moment to sear the meat and blacken or caramelize the onions. In a Dutch oven, heat oil on medium-high heat and add meat, searing on all sides for approx 1-2 min each. Place meat in the slow cooker. In the Dutch oven, add the rest of the oil, reduce heat to medium and add sliced onions until lightly blackened or medium-low to caramelize, stirring frequently. Add on top of meat.
  • Turn slow cooker on LOW 6-7 hours if using a brisket or 8-10 hours if using a roast. If you're short on time you can do 2 hours on high and 5 hours on low ONLY for roasts. If you do this with the brisket it will be very dry.
  • Split baguette in half and cut to the length of choice. Place on an ungreased cookie sheet under the broiler for 1-2 minutes until very lightly toasted.
  • Remove the meat from the slow cooker (reserve and strain the au jus from the slow cooker). Slice the meat across the grain, stack on top of the baguette and serve with strained au jus.

My Go-To Comfort Food: French Dip

As a busy working mom, finding time to cook delicious and satisfying meals can be a real challenge. Weeknights are a blur of homework help, soccer practice, and the never-ending cycle of laundry. But even amidst the chaos, I always make time for a little self-care, and for me, that often means creating a comforting meal that tastes as good as it feels to make. My French Dip recipe is one such dish – a hearty, flavorful masterpiece that's surprisingly easy to whip up even on the busiest of days.

I first stumbled upon this recipe about a decade ago, adapting it from a Food Network show. Over the years, it’s become a family favorite, a go-to comfort food that always delivers. The beauty of this recipe lies in its versatility. You can use either a brisket or a chuck roast, depending on your preference and the time you have available. A brisket will result in a more tender and flavorful sandwich, but it requires a longer cooking time in the slow cooker. A chuck roast, while perhaps slightly less tender, cooks up much faster, making it a perfect weeknight option.

What truly sets this French Dip apart, though, isn't just the ease of preparation but the rich, savory depth of flavor. The combination of beef broth, onion soup mix, beer, and a medley of herbs creates an unbelievably delicious au jus, a flavorful gravy that perfectly complements the tender, juicy meat. The sourdough baguette adds the perfect touch of crusty texture, perfectly absorbing the rich au jus and adding a pleasing contrast to the tender meat. It's the kind of dish that's both sophisticated and satisfyingly simple, a culinary hug on a plate.

I often adjust the recipe based on what I have on hand. Sometimes I add a splash of Worcestershire sauce for an extra layer of umami. Other times, I’ll swap out the beer for a different type, experimenting with various dark ales or even a robust red wine. The beauty of this recipe is that it’s incredibly forgiving. Don't hesitate to tweak it to your own liking; it’s your culinary canvas, after all. Feel free to add different herbs and spices or even throw in some carrots or celery to the slow cooker for an added layer of flavor.

Beyond the adaptability, it's the simplicity that truly makes this recipe a favorite. The slow cooker does most of the work, allowing you to focus on other tasks while the meat simmers to perfection. It’s a hands-off approach that allows me to manage my work, my family, and my personal time without compromising on a delicious and satisfying meal. The aroma alone is enough to lift my spirits on a long day.

The final step, the broiling of the baguette slices, adds a lovely crispiness that contrasts beautifully with the tender meat and the rich au jus. It's a small detail but it elevates the entire experience. Once it's all assembled, the French Dip sandwich becomes a celebration of flavors and textures, a perfect harmony of savory, tangy, and slightly sweet notes. This recipe isn't just a meal; it’s a reminder to slow down, savor the moment, and enjoy the simple pleasures in life.

So, whether you're a busy professional, a harried mom, or simply someone who appreciates a comforting, delicious meal, give this French Dip recipe a try. You won't be disappointed. It's a testament to the fact that delicious food doesn't have to be complicated. In fact, sometimes, the simplest recipes are the most rewarding, offering a delicious escape from the everyday hustle and bustle, one bite at a time.
