Step-by-step

  • Heat your Instant Pot Gem on sear/Sauté to 400F or on the stovetop, heat a nonstick 10-inch pan and when it's hot, add in the oil. You want a wide saucepan.
  • To the hot oil, add the ginger and jalapeños.
  • Note that I cut the ginger quite small. I made coins, then I made matchsticks, then I cut the dice. You want to do this so you don't get a huge chunk of ginger in any one bite.
  • Add the chicken and let the chicken sear on one side and then flip over.
  • Add in tomatoes and stir well.
  • Add all the spices and stir.
  • Now, you're going to cook this lovely, fragrant mixture until it is all well cooked. Do NOT add water. Do NOT cover. Stir once in a while. This is the point you'll be happy you listened to me and used a nonstick pan or the Gem.
  • As the chicken and tomatoes cook, you're going to see the water evaporating, the tomatoes caramelizing and mushing up--and most importantly, the oil separating.
  • Some of this oil is what you added, some of it is what's being rendered out of any fat that was on the chicken.
  • By the time the water has mostly or completely evaporated, your chicken will be done. Verify this with a meat thermometer so it is at 165F.
  • Add all the finishing ingredients and have at it!

A Quick and Flavorful Keto Punjabi Chicken Curry: My Weeknight Hero

As a busy professional, finding time to cook healthy and delicious meals can feel like a Herculean task. But honestly, it doesn't have to be! This Keto Punjabi Dry Chicken Curry recipe has become my weeknight savior. It's quick, flavorful, and surprisingly easy to make, even after a long day at the office. The best part? It fits perfectly into my low-carb lifestyle, keeping me satisfied and energized without the carb crash.

I used to think that authentic Indian curries were too time-consuming to prepare on a weekday. The complex spice blends, the careful layering of flavors…it all seemed so daunting. But this recipe proves that you can achieve incredible depth of flavor without spending hours in the kitchen. The key is using high-quality ingredients and a few smart techniques. For instance, finely dicing the ginger ensures even distribution of flavor throughout the dish, preventing those unpleasant surprises of a giant ginger chunk in your bite. And the secret to the perfect dry curry? Letting the chicken and tomatoes cook down beautifully, allowing the water to evaporate completely and the flavors to meld together into a delicious, rich sauce.

The beauty of this recipe is its adaptability. Feel free to adjust the spice level to your preference. I like a good kick, so I often add a bit more cayenne pepper than the recipe suggests. However, if you prefer a milder curry, simply reduce the amount or omit it altogether. You can also experiment with different types of chili peppers, like serrano or poblano, to find your perfect spice profile. And because it's a dry curry, there's no need to worry about excess liquid making it watery or bland. The result is a perfectly balanced curry with a delightful concentration of flavor.

This recipe isn't just quick and easy; it's also incredibly versatile. Serve it over cauliflower rice for a complete keto meal, or enjoy it as a side dish alongside some roasted vegetables. It’s equally delicious served hot or cold, making it a perfect option for meal prepping. I often make a large batch on the weekend and enjoy it for lunches throughout the week. The flavors only deepen over time, so it's even better the next day!

Beyond its convenience and taste, this recipe is a source of pride for me. It represents my ability to manage a demanding career while still maintaining a healthy and enjoyable culinary life. It's a testament to the fact that delicious, nutritious meals don't have to be complicated or time-consuming. With a little planning and the right recipe, even a busy weeknight can be filled with the aroma and joy of a truly satisfying meal. Give this recipe a try, and I'm confident it'll become a new favorite in your kitchen, too!

Ingredients I used:

  • 2 tablespoons oil
  • 2 tablespoons lemon juice
  • 1 cup chopped tomatoes
  • 1/4 cup chopped cilantro
  • 1 teaspoon garam masala
  • 2 teaspoons turmeric
  • 2 tablespoons diced ginger
  • 1 tablespoon minced jalapeño or serrano pepper
  • 1.5 pounds boneless skinless chicken thighs cut into 4 pieces
  • 1/2-1 teaspoon cayenne (or more, to taste!)

Tips for Success:

  • Don't be afraid to experiment with spices! The beauty of Indian cuisine lies in its diverse spice blends. Feel free to adjust the amounts to your liking.
  • Use a good quality oil. A high-smoke-point oil, such as avocado oil or coconut oil, will work well for this recipe.
  • Finely dice your ginger. This ensures that the ginger flavor is evenly distributed throughout the curry.
  • Let the chicken and tomatoes cook down completely. This is essential for developing the rich, concentrated flavor of the dry curry.

This Keto Punjabi Dry Chicken Curry is more than just a recipe; it's a shortcut to a delicious and satisfying meal that fits perfectly into a busy lifestyle. So go ahead, give it a try and experience the joy of a flavorful, healthy meal that takes less time than you might think!
