Vegetable Potpie

This is a wonderful cold weather comfort food. Be sure the potatoes are cooked before putting them in the casserole. I have made this before without cooking them enough. A few times I have cooked the potatoes separately to be sure they are cooked enough.

  • Preparing Time: 25 minutes
  • Total Time: 1 hour
  • Served Person: 6

Step-by-step

  • Preheat oven to 350°F. In a large skillet, melt margarine over medium heat. Add onion and garlic, cook, stirring occasionally, until soft 2 to 3 minutes. Add broccoli florets, peas, carrot, green beans and potatoes. Cook, stirring occasionally, 5 minutes. Reduce heat to low. Stir in cream of mushroom soup, mushrooms, paprika, broth, parsley, fine herbes, and stir. Cover and cook 10 minutes (or longer- until potatoes are tender). Remove from heat.
  • Transfer cooked vegetables to a 2-qt casserole dish. In a bowl, blend biscuit mix with cornmeal, cheese and buttermilk. On a lightly floured surface, knead dough until it loses its stickiness, 3 to 4 minutes. On a layer of wax paper, roll out dough to size of baking dish.
  • Carefully lift rolled-out cornmeal dough and invert to cover casserole dish. Remove wax paper. Crimp edges to side of casserole to cover tightly. Make a few slits on top of the pie. Bake 20 to 25 minutes until crust is golden brown.

The aroma of baking pot pie fills my kitchen, a comforting scent that speaks of cozy evenings and heartwarming meals. I've always loved the versatility of pot pie – a blank canvas for whatever vegetables I have on hand, easily adaptable to seasonal ingredients. What makes this pot pie special? It's the simplicity, the balance of flavors, and the undeniable satisfaction of creating something so delicious from scratch. The magic of this recipe lies in the details: The careful selection of vegetables, their perfect blend of textures and tastes, the rich creaminess of the mushroom soup, and the irresistible crunch of the homemade crust. I've learned over the years that using fresh, high-quality ingredients truly makes all the difference. Each vegetable adds its own unique character: the subtle sweetness of the carrots, the vibrant green of the broccoli and peas, the earthiness of the mushrooms, and the comforting starchiness of the potatoes. And the crust? Oh, the crust! It's that perfect balance of flaky and tender, a golden-brown crown to this culinary masterpiece.

This recipe is more than just a meal; it's an experience.
