Step-by-step

  • Preheat oven to 350 degrees. Line baking pan with foil for easy clean up. Spray pan with vegetable spray.
  • Mix flour with pepper (and salt if you are using it) in a plastic bag and shake a few pieces of chicken at a time.
  • Place baking sheet and bake in oven for 30-40 minutes. Doesn't have to be fully cooked.
  • If you would like chicken browner, put under broiler for a few minutes; watch closely.
  • Meanwhile, in a 5-6 qt. dutch oven, heat pan and put in a small amount of olive oil; when hot, add onions, green peppers, garlic and celery. Brown lightly.
  • Add rest of ingredients; stir.
  • Add partially cooked chicken and cook for about 15-20 more minutes.
  • We like our chicken falling off the bone and I made this for Shabbat, so it still had an hour or so in a very low oven before we ate dinner. Otherwise, just cook until done on top of the oven.
  • Serve with noodles or rice.

Nancy's Chicken Cacciatore: A Family Favorite

The aroma of simmering tomatoes, herbs, and tender chicken fills my kitchen, a comforting symphony that heralds the arrival of a beloved family meal: Nancy's Chicken Cacciatore. This recipe isn't just a collection of ingredients; it's a story woven into every bubbling spoonful, a testament to the simple joys of home-cooked goodness. Over the years, it's become more than just a dish; it's a tradition, a link to simpler times and cherished memories.

I remember first encountering this recipe years ago, a handwritten card tucked away in my grandmother's recipe box, stained with the marks of countless uses. The chicken cacciatore became my go-to dish during busy weeks, a meal that’s both satisfying and relatively quick to prepare. It’s incredibly versatile too; sometimes I add mushrooms, other times zucchini or bell peppers, depending on what's fresh at the market. The beauty lies in its adaptability; you can tailor it to your own taste and what you have on hand. It's a recipe that’s evolved with me, reflecting changing seasons and family gatherings.

The heart of this dish lies in the rich, savory sauce. The blend of tomatoes, onions, garlic, and herbs creates a depth of flavor that's hard to resist. I’ve experimented with different types of tomatoes – canned plum tomatoes, fresh tomatoes, even a combination of both – each offering a unique nuance to the final product. The Worcestershire sauce adds a subtle umami note that perfectly complements the other ingredients. The secret, however, isn't just in the ingredients themselves, but in the time it takes to meld them together, allowing their individual flavors to intertwine and create a harmonious whole. The slow simmering process is essential, allowing the sauce to reduce and deepen its flavor profile.

Beyond its deliciousness, this dish holds a special place in my heart for the memories it evokes. I picture my grandmother, her apron dusted with flour, patiently stirring the simmering pot, her warm smile a beacon in the cozy kitchen. Now, it's my turn to share this tradition, to pass down the recipe and the memories it carries to my children. The scent of Nancy’s Chicken Cacciatore is more than just a delicious smell; it's the fragrance of family, love, and a timeless culinary legacy. The simple act of preparing this dish connects me to the past and brings joy to the present. It is a comfort food in every sense of the word, a culinary hug that nourishes the body and soul. This is more than just a recipe; it's a legacy.

The beauty of this chicken cacciatore is its versatility. Serve it over pasta, rice, or even mashed potatoes. It's equally delicious served hot or at room temperature, making it a perfect choice for potlucks or casual gatherings. It’s hearty enough to satisfy on a chilly evening yet light enough to enjoy during warmer months. It’s a dish that truly transcends seasons and occasions.

One of the best things about this recipe is its ability to be customized to your liking. Feel free to adjust the spices to your preference. Add a pinch of red pepper flakes for a little heat, or a dash of balsamic vinegar for extra complexity. You could even add some sausage or pepperoni for a heartier meal. The possibilities are endless!

This isn’t just a meal; it’s an experience. It’s a journey through flavors, a celebration of simple ingredients transformed into something extraordinary. And it's a dish that I’m proud to share with you. So, gather your ingredients, put on some music, and let the culinary magic begin. The deliciousness that awaits is well worth the effort.
