Step-by-step

  • About 2 hours ahead of time, timed so that everything finishes as close to the same time as possible:
  • Set sous vide cooker to 139F.
  • Rinse squid tubes and cut into 1/2" rings. Place in vacuum bag with 2-3 tablespoons fra diavolo sauce. Vacuum seal and cook for 2.5 hours (this should finish while you're sauteing the shrimp and scallops).
  • Peel shrimp, rinse, and clean if desired or needed; place in a bowl and refrigerate.
  • When ready: Heat water for pasta to boiling. While the water is heating, place the remaining fra diavolo sauce in a 3-4 quart pot and heat to simmering.
  • Cook pasta according to directions, to al dente. Drain and set aside.
  • Add clams to simmering sauce and cover. Cook about 4 minutes.
  • Saute shrimp and scallops (together if you wish) in olive oil in a 12" high-sided stainless or nonstick skillet. Be careful not to overcook; it should take 4 minutes or so total. Off the heat and remove the pan from the burner when finished.
  • Check sauce. If clams are mostly cooked/open, off the heat. If not, re-cover and cook a few more minutes.
  • Remove calamari from sous vide bath and cut open the bag. Set aside.
  • When clams are finished, add pasta to skillet with shrimp and scallops and place back on burner over medium-low heat. Toss to separate pasta.
  • Add calamari and the clams and remaining fra diavolo sauce to the skillet and toss to sauce the pasta. Cook for a minute or so, tossing pasta, then remove from heat and plate.
