  • Preheat oven to 375 degrees.

  • While the loin cooks, put the Champagne and cider in a non-reactive saucepan over medium heat. When it begins simmering well, reduce heat to medium-low and simmer for two minutes. Add apples and cook until tender, 5-10 minutes, then transfer the apples to a small bowl. Increase heat to medium-high and reduce the liquid to ¼ cup. Set aside.
  • In the skillet where the loin was browned, add the onion and cook until tender, stirring occasionally, 3 to 5 minutes. Add the chicken stock, cream, Champagne/cider reduction, thyme and nutmeg. Cook over medium-low heat until cream is reduced and thickened, about 10 minutes.
  • Add 4 or 5 apple pieces and lightly crush them in the sauce. Season with the salt and pepper to taste and add the remaining apple pieces, being careful not to break them. Add the green grapes and keep the sauce warm, covered, while the pork is in the oven.
  • Take the pork loin out of the oven and let it cool for 10 minutes. Cut it in thin slices. Add the drippings left in the roasting pan to the sauce and stir well. Arrange loin slices on a platter and pour sauce on top. Decorate with thyme sprigs.
