Step-by-step

  • Soak 6-7 strips of tamarind in half-cup hot water.
  • Prepare mustard paste.
  • Cut green chillies length-wise. Use long green chilies.
  • Peel dosakaya & cut them into 1cm cubes. Remove seeds. Taste 1 dosakaya piece to ensure it's not bitter.
  • Put a depth pan and make seasoning in oil with chana dal - 2 spoons, idli dal - 1 spoon, mustard seeds - 1 small spoon, jeera - 1 small spoon, red chili pieces - 3 chillies, curry leaves.
  • Then squeeze tamarind pieces so it will become paste.
  • Add some turmeric.
  • Add some salt, let this mixture cook. The water (from tamarind) might evaporate.
  • Then add dosakaya pieces and let them cook for 5-8 minutes.
  • You will know the pieces are cooked when they start to soften.
  • Switch off the stove and let the curry cool down.
  • After 10-15 mins add 2-3 spoons of mustard paste and mix well.
  • Taste. Most likely you need to add a bit of salt.
  • Don't add all mustard paste just because you have it.
