  • To make the spread, mix together cream cheese, mayonnaise, lime juice, Sriracha sauce, rice wine vinegar, cayenne, and chopped cilantro in a medium bowl. Cover and refrigerate or set aside.
  • For the pickled cucumbers, slice the cucumbers on a mandolin slicer into a bowl. Combine sour cream, mayo, Sriracha, lime juice, rice wine vinegar, cilantro and salt. Pour over cucumbers, refrigerate until ready to serve.
  • Start bacon in a cold frying pan over medium heat. Cook until crisp. Place cooked bacon in a stainless steel bowl. Drizzle 4 tbsp of bacon fat and the honey and Sriracha over the hot bacon. Toss to combine.
  • For the burgers, gently combine meat with garlic, and salt and pepper. Form patty with minimal handling. Press a thumbprint in the center of each patty. Season again with salt and pepper on both sides. Heat oil in a frying pan over med-high heat. When the oil is glistening, carefully add patty. Cook 3-4 minutes (for medium) then flip and cook an additional 1-2 minutes. Top with a slice of Havarti cheese and allow to melt. Remove from pan and allow to rest briefly.
  • Toast brioche bun under a broiler or in a toaster oven. Very generously slather each side of the bun with the creamy Sriracha spread. Top the bottom bun with lettuce/cilantro/mint mixture, place pickled cucumbers next, then the burger, and then top the burger with the candied bacon. Set bun tops in place and serve immediately.
