Step-by-step

  • Add the flour and all dry spices to a paper bag. I usually put the paper bag inside of a plastic bag in case of breakage.
  • Fold wings, I like using whole wings, I think that they fry up better.
  • Season wings with the same seasoning that was used in the flour. I am a little heavy-handed on the pepper, but season to your taste.
  • Let the wings sit for 10 mins. Meanwhile, in a cast iron skillet, bring oil to 350 degrees. NOTE: Temperature is paramount when frying anything, so make sure you keep an eye on your temp.
  • Take 4 wings and place them in the bag, shake making sure that they are well covered, take them out of the bag and let sit for about 3-4 mins.
  • Place wings in oil...I use the 3-4 mins per side method depending on how big the wings are.
  • Cook until golden brown. There will be some residual cooking after removing wings so let them sit for about 5 mins after removing from oil.
  • Make sure to have some kosher salt on hand...always season fried foods the minute that you remove them from the oil.
  • I like to serve these with Pork and Beans and rice.....I'm an ol' southern boy!
