Step-by-step

  • Pre-heat oven to 325F. Adjust the rack to the middle of the oven.
  • Combine the crust dry ingredients in a medium bowl.
  • Mix in the butter.
  • Pour the crust mixture into a 9 inch x 3.5 inch springform pan and press halfway up the sides using your fingers. Use a flat bottomed cup to press the mixture into the bottom.
  • Refrigerate the crust for 20 minutes.
  • In a large mixing bowl, beat the room temperature cream cheese with a hand mixer until light and fluffy. If you use a stand mixer use the paddle attachment.
  • Add in the sweetener a little at a time (about 1/3) and beat with the hand mixer.
  • Add in the room temperature eggs one at a time and beat until well incorporated.
  • Finally, add in the vanilla and room temperature sour cream and beat until just incorporated.
  • Pour the cheesecake mixture into the crust and even out the top.
  • Bake in the pre-heated oven. Check after 50 minutes. The top should no longer be glossy and the center should still be jiggly.
  • Turn off the oven and crack the door. Let the cheesecake sit in the oven for 30 minutes.
  • Remove the cheesecake from the oven run a sharp paring knife between the cheesecake and the pan (this is to ensure the cake doesn't stick. Do not remove the springform).
  • Let sit on the counter for 1 hour.
  • Cover loosely with plastic wrap and refrigerate for at least 8 hours.
  • Remove the springform pan sides, decorate the top, and serve. Makes 12 slices.

My Keto Cheesecake Journey: A Deliciously Low-Carb Adventure

As a busy working mom, finding time for myself is a luxury, but indulging in a delicious dessert is a necessity! I’ve always had a sweet tooth, but since embracing a ketogenic lifestyle, finding keto-friendly treats that satisfy my cravings has been a real adventure. This keto cheesecake recipe has become my absolute go-to. It's creamy, rich, and surprisingly easy to make, even on a busy weeknight. The best part? It doesn't compromise on taste, even while keeping my carbs low.

The journey to perfecting this recipe wasn't without its challenges. Initially, my attempts resulted in either a dry, crumbly crust or a cheesecake that was too dense. Through trial and error (and a few less-than-perfect cheesecakes!), I discovered the key to success lies in the details. Room temperature ingredients are crucial for a smooth, creamy texture. Trust me on this one; letting your cream cheese, eggs, and sour cream reach room temperature before mixing is a game changer! It makes all the difference in the final product.

Beyond the technical aspects, making this cheesecake became a therapeutic process. The quiet time spent measuring ingredients, mixing, and patiently waiting for it to bake was a welcome break in my hectic schedule. The aroma that filled my kitchen during baking was intoxicating, and the anticipation of the final result was almost as satisfying as the taste itself. Now, it's more than just a dessert; it’s a ritual, a small act of self-care amid the daily chaos.

One of my favorite parts of this whole experience is sharing it with my family and friends. I love watching their faces light up when they take their first bite. Their delight makes all the effort worthwhile. It's a delicious way to show them I care, especially because it’s something healthy and delicious they can enjoy too. This isn’t just a keto cheesecake recipe; it's a recipe for creating happy memories.

This recipe isn't just about low carbs; it's about finding a balance between healthy eating and satisfying your sweet cravings. It's a testament to the fact that a keto lifestyle doesn't have to be restrictive or boring. It can be exciting, delicious, and filled with moments of joy—one creamy, decadent slice at a time. So, go ahead and give this recipe a try. It’s a delightful journey waiting to happen, and your taste buds (and your waistline) will thank you for it.

Remember to always adjust sweetness to your preferences. Some may prefer a less sweet cheesecake and can reduce the amount of sweetener accordingly. The best part about this recipe is its adaptability. Feel free to experiment with different toppings – fresh berries, a drizzle of sugar-free chocolate, or even a sprinkle of chopped nuts. The possibilities are endless!

I hope this keto cheesecake recipe brings you as much joy as it has brought me. Happy baking!
