Lemon Mousse

I love all things lemon, especially lemon curd. But it is pretty intense on its own, so I often lighten it up with whipped cream to make an easy mousse. It goes especially well with gingersnaps on the side.

Step-by-step

  • In a heat-proof bowl that will fit in the inner pot, beat the sugar and butter with a hand mixer until the sugar has mostly dissolved and the mixture is light colored and fluffy.
  • Add the egg yolks and beat until combined.
  • Add the lemon zest, lemon juice, and salt, and beat to combine. The mixture will appear grainy.
  • Cover the bowl with aluminum foil.
  • Add 1 cup of water to the inner pot. Place a trivet with handles in the pot and then place the bowl on top. Lock the lid into place.
  • Select Pressure Cook or Manual, and adjust the pressure to High and the time to 10 minutes.
  • After cooking, let the pressure release naturally for 10 minutes, then quick release any remaining pressure. Unlock the lid.
  • Carefully remove the bowl, and remove and discard the foil. The mixture will appear clumpy and curdled.
  • Whisk the curd mixture until smooth.
  • Place a fine-mesh strainer over a medium bowl and pour the curd through it, pressing down with a flexible spatula to pass the curd through, leaving the zest and any curdled egg bits behind (discard those).
  • Cover with plastic wrap, pushing the wrap down on top of the curd to keep a skin from forming.
  • Refrigerate until cooled, about 2 hours.
  • When the curd is cooled, whip the cream until medium-firm peaks form.
  • Add about a third of the whipped cream to the curd and fold it in gently.
  • Repeat with another third of whipped cream, then finish with the last third.
  • Spoon the mousse into dessert dishes and serve immediately, or refrigerate, covered, up to overnight.

A Housewife's Lemon Dream: Easy Lemon Mousse Recipe

Oh, the joys of a simple dessert! As a busy housewife, juggling work, kids, and a never-ending to-do list, I crave recipes that are both delicious and manageable. This Lemon Mousse perfectly fits the bill. It's elegant enough for a special occasion, yet straightforward enough for a weeknight treat. The tangy lemon flavor is a refreshing burst, a perfect counterpoint to the richness of the whipped cream. And let's be honest, the ease of preparation is a huge bonus when time is a precious commodity.

I stumbled upon this recipe quite by accident – a happy accident, I might add. I was experimenting with different ways to use up leftover lemon curd (don't judge, I have a slight lemon curd obsession!), and the idea of incorporating whipped cream struck me. The result? A light, airy mousse that's far less cloying than straight lemon curd. The subtle sweetness, combined with the tartness of the lemon, creates a delightful balance of flavors. It's a dessert that’s both satisfying and refreshing, leaving you feeling indulged without feeling weighed down. I often serve this mousse in small, individual glasses, garnished with a sprig of mint or a few lemon zest curls. It's a beautiful presentation that adds a touch of elegance to any meal.

Beyond its deliciousness, this lemon mousse is also incredibly versatile. It’s perfect served after a light dinner, alongside some fresh berries for an extra pop of color and flavor, or perhaps some delicate shortbread cookies for a textural contrast. For a more substantial dessert, you could add a layer of crumbled gingersnaps to the bottom of the serving glasses, creating a delightful little dessert parfait. The beauty of this recipe lies in its adaptability. Feel free to experiment with different garnishes or serving styles to make it your own. A dash of vanilla extract, a sprinkle of powdered sugar – the possibilities are endless!

This Lemon Mousse recipe isn't just about a delightful dessert; it's about creating a moment of peace in the midst of a busy life. It's about finding joy in the simple act of creating something delicious, something beautiful, something that brings a smile to your face and a touch of sweetness to your day. And isn't that what life is all about?
