Step-by-step

  • If you have a grater attachment for your food processor you can use it to grate the beets directly into the processor. If not grate beets with the grater you have, then add the beets, along with all of the remaining ingredients to the food processor.
  • Pulse, stopping to scrape the sides, until the mixture comes together.
  • Form into 4 patties. The patty mixture will be very sticky, so wet your hands in between forming each patty, to help stop the sticking.
  • Heat enough oil to cover the bottom of a large skillet over medium heat. When hot, add the patties. Cooking them low and slow is the key for good texture. Cook about 3 to 5 minutes per side, until they are nicely browned on both sides and hold together well.
  • Serve hot on a bun with your favourite burger toppings.
  • Preheat your oven to 350F (180C). Lightly grease a baking sheet or line it with parchment paper.
  • Lay the patties out in a single layer with room around them for air to circulate.
  • Bake 30 to 35 minutes, flipping halfway through until firmed up and lightly brown on both sides.
  • Serve hot on a bun with your favourite burger toppings.

My Unexpected Vegan Beet Burger Adventure

As a busy mom of three, finding time to cook healthy and delicious meals often feels like navigating a minefield. Between school runs, work deadlines, and endless laundry, my kitchen often resembles a battlefield more than a haven of culinary creativity. So, when I stumbled upon this recipe for vegan beet burgers, I was initially skeptical. Beets? In a burger? It sounded… adventurous, to say the least. But, desperate times call for desperate measures, and my family was craving something beyond the usual chicken nuggets and pasta.

I must admit, the initial steps were a bit of a challenge. My food processor, bless its rusty heart, decided to stage a minor rebellion halfway through the process. The mixture, as the recipe warned, was incredibly sticky, turning my hands into a vibrant shade of beetroot red. Despite the initial chaos, however, the process was surprisingly simple. I quickly learned the key to success is a generous amount of patience and a willingness to embrace the mess.

The aroma that filled my kitchen as the burgers baked was incredible; earthy, sweet, and subtly spicy, with a hint of something warm and comforting. My children, notoriously picky eaters, watched with a mixture of curiosity and suspicion as I carefully removed the perfectly formed patties from the oven. Their skepticism quickly melted away, however, at the first bite. The burgers were surprisingly flavorful, with a delightful texture that was both hearty and satisfying. The sweetness of the beets was balanced perfectly by the earthy spices, and the lentils provided a satisfying density. Even my husband, a self-proclaimed burger aficionado, declared them a resounding success.

This recipe has quickly become a staple in our home. It's incredibly versatile – I've experimented with adding different spices and toppings to keep things interesting.
