Step-by-step

  • Preheat your oven to 375 degrees Fahrenheit.
  • Mix all of the ingredients noted above except for the cheese in a large mixing bowl. Don't be afraid to get your hands dirty. Molding the meat into animal shapes when your kids walk through the kitchen is highly encouraged.
  • Add the spices to taste and bread crumbs until the mixture is not slimy and can form a loaf.
  • Once properly mixed, pat the mixture into a loaf pan. I strongly recommend using a non-stick, double pan with a false bottom that allows the fat to drain away. This will ensure the meatloaf releases from the pan without breaking apart, and it will also be nice and firm instead of soggy.
  • Bake for around 80 minutes to a safe ground meat temperature of 160 degrees Fahrenheit.
  • Immediately after removing it from the oven, release the loaf from the pan, slice it, and (laying the slices on their side) top them with an American cheese single. The residual heat will be sufficient to melt the cheese as you add side items to the plate prior to serving.
  • Be sure to offer ketchup on the side, but if you were thinking of topping the loaf with ketchup prior to baking it has been my experience that this is neither necessary nor desired if the right loaf pan is used.
  • I like to dress my portion with sharp cheddar cheese and hot sauce, but, as always, be creative!
  • Also, any refrigerated leftover loaf can be easily sliced to any desired thickness and made into as awesome a sandwich as you can conjure up. Have fun with it!

My World-Famous Meatloaf Recipe: A Family Favorite

As a busy mom, finding time to cook delicious, satisfying meals for my family is always a juggling act. But one recipe that consistently rises to the occasion – and earns enthusiastic applause from my picky eaters – is my meatloaf. I’m not exaggerating when I say it's become a family legend, a dish that evokes happy memories of cozy evenings and satisfied bellies. It’s simple, hearty, and endlessly adaptable, perfect for a weeknight dinner or a special occasion.

The secret, you ask? It's not some hidden ingredient or a complicated technique. It's about using quality ingredients and embracing a little bit of heart. I use a good blend of ground beef and sausage for a richer flavor. The addition of Rotel diced tomatoes adds a touch of tangy sweetness, and fresh parsley brightens things up beautifully. Garlic powder, of course, is essential, and breadcrumbs act as the perfect binder, keeping the loaf moist and tender. Beyond the core recipe, I encourage you to get creative! Experiment with spices to find your favorite blend, add vegetables, or swap in different cheeses for topping. I love to add hot sauce to mine!

The most important tip I can give you is the baking pan. I recommend using a non-stick loaf pan with a false bottom for optimal results. This allows the fat to drain away, keeping the meatloaf nice and firm and preventing it from becoming soggy. A perfectly firm, nicely browned meatloaf— that's the key to "world famous" status. This meatloaf is not only delicious but also incredibly versatile. Leftovers can be repurposed into delicious sandwiches, making it a fantastic recipe for meal prepping and minimizing food waste. I often slice up the leftover loaf and pack it for my sons' lunches during the week.

Beyond the practical advantages, this meatloaf holds a special place in our family. The process of making it has become a shared experience, a time for connection and laughter. My sons love to help shape the meatloaf into fun animal shapes before it goes into the oven. The kitchen sometimes looks like a zoo! It's these moments, these shared experiences around the kitchen table, that make this dish more than just a recipe—it's a tradition, a testament to the simple joys of family life. So go ahead, give this recipe a try. And remember, even if it doesn't become "world-famous" in your household, I guarantee it'll become a beloved staple.

One of my favorite ways to serve this meatloaf is with a side of creamy mashed potatoes and roasted vegetables. The combination of flavors and textures is simply divine! Sometimes I’ll whip up a simple green salad on the side to add a refreshing contrast. Other times, we’ll enjoy it with simple steamed broccoli or some sweet corn on the cob. The possibilities are endless, allowing you to customize your meal to your family's preferences.

Making this meatloaf is not only a rewarding culinary experience but also a fun bonding opportunity for the whole family. This recipe is a staple in our home, and I'm thrilled to share it with you. Whether you're a seasoned cook or a kitchen novice, I'm confident you'll enjoy this recipe as much as we do. So gather your ingredients, preheat your oven, and get ready to create some unforgettable family memories in the kitchen!
