My Go-To Weeknight Meal: Tofu Nasi Goreng

Let's be honest, as a mum of three, finding time to cook a healthy and delicious meal is a constant juggle. Between school runs, work deadlines, and keeping the little ones entertained, the last thing I want is to spend hours in the kitchen. That's why I've become a huge fan of quick, easy recipes that don't compromise on flavour – and this Tofu Nasi Goreng is my absolute favourite. It's packed with fresh vegetables, protein-rich tofu, and vibrant Asian flavours that are guaranteed to please the whole family (even the picky eaters!).

The beauty of this dish is its versatility. I often adjust it based on what’s in my fridge. Sometimes I add extra vegetables like snow peas or mushrooms; other times I’ll swap the brown rice for quinoa for a boost of protein. The key is to have fun with it and make it your own. And the best part? It’s ready in under 30 minutes – a lifesaver on those crazy weeknights!

Why I love this recipe:

  • Quick and Easy: Perfect for busy weeknights.
  • Healthy and Nutritious: Packed with veggies and protein.
  • Delicious and Flavorful: The combination of sweet, savory, and spicy is irresistible.
  • Versatile: Easily adaptable to your preferences and dietary needs.
  • Budget-Friendly: Uses readily available and affordable ingredients.

I often make a double batch on the weekend and store half for quick lunches during the week. It reheats beautifully and tastes even better the next day! Trust me, this Tofu Nasi Goreng will quickly become a staple in your dinner rotation.

Tips and Tricks for the Perfect Tofu Nasi Goreng:

  • Press the Tofu: This removes excess water and helps it crisp up nicely in the pan.
  • Don't Overcrowd the Pan: Cook the tofu in batches to ensure it gets golden brown and crispy on all sides.
  • Fresh Ingredients: Using fresh ginger and garlic makes a huge difference in the flavour.
  • Adjust the Spice Level: Add more or less sambal oelek depending on your preference.
  • Garnish Generously: The fresh coriander, spring onions, and chilli add a beautiful pop of colour and flavour.

I hope you enjoy this recipe as much as I do! Let me know in the comments how it turned out for you. Happy cooking!
