Step-by-step

  • Drizzle the olive oil into a large saute pan.
  • Add the tomatoes, artichoke hearts, olives, caper berries, and lemon slices into the pan. (save 8 lemon slices for the tops of the fish).
  • Add the fish to the pan on top of the veggie mixture and then add the white wine. Sprinkle on salt and pepper and then add 2 slices of lemon to each piece of fish.
  • Cover the pan TIGHTLY with aluminum foil. Place the entire pan on the outside grill and close the grill cover for 15-20 minutes. The fish should be cooked through. (in the winter the oven will do fine too).
  • Serve from the pan. The magazine said to serve with lots of crusty bread to sop up the juices! You could also serve over rice.
